CHICKEN ENCHILADAS

DINNER AT HOME

I would put my Chicken Enchiladas up against any Mexican restaurant in Hawaii.  They were really that good.  Kept them lower carb by using low carb Flour Tortillas.  Topping with Sour Cream and Avocado really adds a lot of flavor and really compliments the chicken.  I need to make these again and take photos of the ingredients I used to make the filling.  Started by shredding a Rotisserie Chicken by hand and then adding it to a mixture of sautéed Onions, Jalapeños and Garlic.  Added a small can of Green Chilies, Mexican Tomatoes and some Hatch Green Chili Salsa.  Used Rosarito Enchilada Sauce which has a mild flavor.  Covered in a Mexican Cheese blend and warmed in oven.  Topped with Avocado, Sour Cream, Cilantro and Green Onion.

DIP TORITALLAS IN ENCHILADA SAUCE AND FILL WITH CHICKEN MIXTURE


COVER WITH ENCHILADA SAUCE

LOTS OF MEXICAN CHEESE

BAKE AT 350 DEGREES FOR ABOUT 25 MINUTES 
TOP WITH SOUR CREAM, GREEN ONION, CILANTRO AND AVOCADO

CHICKEN ENCHILADAS

DINNER AT HOME

Picked up a Rotisserie Chicken and made these delicious Chicken Enchiladas.
Ala Madre low carb tortillas of course!

CHICKEN ENCHILADAS

SHREDDED CHICKEN, GREEN CHILIS, ONION, BELL PEPPER, GARLIC,
MEXICAN TOMATOES, CREAM CHEESE, TACO SEASONING, SALT AND PEPPER

ENCHILADA SAUCE, CORN TORTILLAS AND FILLING

MEXICAN CHEESE BLEND

BAKED AT 350 DEGREES FOR 40 MINUTES

Still craving Mexican food after a few days in San Diego.  Had a Costco Rotisserie Chicken so I decided to shred some up and make Shredded Chicken Enchiladas.  Added sautéed Onions and Green Chili's and made up some darn good Enchiladas.  Only thing I will do different next time is ladle down some of the Enchilada Sauce onto the the plate and then place the Enchilada on top.

ROTISSERIE CHICKEN ENCHILADAS

 ROTISSERIE CHICKEN ENCHILADAS

We had one of the Costco Rotisserie Chickens that cost around $6.  I was craving Enchiladas so I used the entire Chicken to make Enchiladas.  Pretty simple recipe that tasted delicious.  I used some of the extra filling to make Chicken Tacos a few days later.  You can also use the filling to make a delicious Taco Salad or Tostada.  One thing I learned here is not to overcook the chicken once in the pan.  If you leave on heat too long, the Chicken will get mushy and you will loose that nice Shredded Chicken texture.  

ROTISSERIE CHICKEN ENCHILADAS

CHOP UP ONE COSTCO ROTISSERIE CHICKEN
SAUTE ONION, JALAPENO AND RED BELL PEPPER IN OLIVE OIL
ADD IN GREEN CHILI'S AND MEXICAN STYLE DICED TOMATOES
HEAT THROUGH AND ADD SALT AND PEPPER TO TASTE
ADD IN THE CHICKEN
ADD IN CORN 
STIR IN ONE CAN OF RINSED BLACK BEANS
SPREAD ENCHILADA SAUCE ON FLOUR TORTILLA AND ADD THE FILLING
TOP WITH MEXICAN 3 BLEND CHEESE.  I PUT SOME OLIVES IN
BECAUSE MY DAUGHTER LOVES THEM
ROLL UP THE TORTILLAS AND PLACE IN PAN THAT HAS BEEN COATED WITH COOKING SPRAY
CHICKEN ENCHILADAS READY FOR SOME SAUCE AND CHEESE
TOP THE ENCHILADAS WITH SAUCE AND MORE CHEESE.  BAKE AT 350 DEGREES
FOR AROUND 20 MINUTES OR UNTIL BROWNED ON TOP
FULLY COOKED CHICKEN ENCHILADAS
TOP WITH A LITTLE SOUR CREME, OLIVES, GREEN ONION AND CILANTRO

SAM'S CLUB ROTISSERIE CHICKEN ENCHILADAS

Could not resist the Rotisserie Chicken Enchiladas at Sam's Club.  At $14.26 this looked like something that could feed our family of three for two days and it did.  Followed the simple directions and heated the Enchiladas for around 50 minutes at 350 degrees.  The entire family was pleasantly surprised with the taste of these Enchiladas.  Lots of flavor in the chicken, tons of cheese and a nice mild sauce.  Each of us could only finish half of one Enchilada at a time so this was a really good value.  You can add lettuce, sour creme, olives and jalapenos to kick up the flavor to suit your taste.  Would not hesitate to buy these again.

AND COOK FOR 50 MINUTES AT 350 DEGREES
REMOVE FROM OVEN AND LET COOL FOR A COUPLE OF MINUTES
ENCHILADAS ARE FULL OF CHICKEN AND PRETTY DARN GOOD!

My Dad and his wife really wanted us to stop at the Ventana Inn on the way down to Cambria.  This was one of their favorite places to enjoy lunch and the beauty of Big Sur.  As we drove up the road to the restaurant I was already sold.  Just like the look and feel of the place.  As you enter the restaurant there is a beautiful and tranquil wishing well in front.  We tossed in a coin and made a wish.  Mine had already came true when I looked at my wife and daughter.  The staff greeted us with smiles as we entered.  It was a little to cool to sit outside on the beautiful deck that overlooks the Pacific.  Instead we were inside enjoying the warmth of a beautiful fireplace.  I ordered the Chicken Enchiladas that were a family recipe for 30 years the menu said.  They were fantastic.  Great chicken, sauce and fresh guacamole.  The beans and rice were first rate too.  Really enjoyed this lunch.  My wife enjoyed a Caesar Salad that was topped with large Anchovies. Delicious she stated.  My daughter just wanted Sorbet.  She is on a Sorbet kick and orders it everywhere we go.  After lunch we ventured outside to the patio that was deserted due to the cool weather.  We were treated to an amazing view.
