We always pick up a Rotisserie Chicken when we visit Costco or Sam's Club.  These $6 birds are not only cheap but also very delicious.  On this evening I prepared some leftover Brussels Sprouts and Squash, Chipotle Mashed Potatoes and served it with the heated Chicken.

ROTISSERIE CHICKEN DINNER

Made a variety of dinners using a $6 Rotisserie Chicken from Costco.  Amazing that a family of three can eat for several days on these delicious $6 birds.  For this quick dinner, I paired the Chicken with Garlic Mashed Potatoes and Broccolini.  Very delicious and satisfying.

We love the $6 Rotisserie Chickens from Costco and Sam's Club.  Cannot beat the price for a whole chicken that taste delicious.  We eat the chicken various ways.  Sometimes served sliced with rice and vegetables and many time in salads.  On this evening I did up a super fresh and lite salad using Romaine and Iceberg Lettuce, Japanese Cucumbers, Carrots, Tomatoes, Avocado and a little bit of Jalapeño Cheddar Cheese.  Topped the salad with diced chicken and it was terrific.

CHEF SALAD

CHEF SALAD
DINNER AT HOME 

Decided to use up the last pieces of a Costco Rotisserie Chicken and some vegetables we had in the refrigerator to make a delicious Chef Salad in just a few minutes.  Salad included the Chicken, Lettuce, Bacon, Salami, Cheddar Cheese, Carrots, Bell Pepper, Tomato and Hard Boiled Egg.
Added a light Balsamic Dressing and enjoyed!

We had to finish off our $4.99 Costco Rotisserie Chicken that had already fed us for two nights.  We picked the chicken clean and added it to a pot with sautéed vegetables, fresh herbs and milk.  This was delicious!!!

CHICKEN POT PIE

COSTCO ROTISSERIE CHICKEN WITH PEAS, CARROTS, ONION,
CELERY, POTATO, MILK, FLOUR, DRIED TARRAGON, THYME,
SALT AND PEPPER HEATED IN A PAN

FILLED BOWL WITH MIXTURE AND TOPPED
WITH PUFF PASTRY.  COOKED IN OVEN FOR 20 MINUTES
