DINNER AT HOME

Found some nice Veal Chops at Foodland Farms for around $7 each.  Decided to sear them off on an indoor grill pan and then finish in the oven for five minutes at 375 degrees.  You must be careful not to overcook veal chops.  You want a perfect medium rare with a pink middle.  Pulled it off perfectly thanks to my wife who after only five minutes in the oven pulled them out.  I added some coarse salt and freshly cracked pepper along with fresh rosemary from our front yard.  Served with garlic mashed potatoes and corn with onions and red bell pepper.  Restaurant quality dinner that was inexpensive and fast.

VEAL CHOPS AT ROOM TEMPERATURE - COATED BOTH SIDES WITH LOTS OF SALT AND PEPPER
COOKED ON HEATED GRILL PAN - TWO MINUTES ON EACH SIDE TO SEAR
SEARED VEAL CHOPS WERE THEN PLACED IN OVEN AT 375 DEGREES FOR FIVE MINUTES
ADDED A BIT MORE SALT AND PEPPER WITH FINELY CHOPPED ROSEMARY

VEAL SCALLOPS WITH MUSHROOM HERB SAUCE

VEAL SCALLOPS WITH
MUSHROOM CREME SAUCE 
DINNER AT HOME

Cooked up a easy and fast dinner using some thinly sliced Veal that was on sale at the market.  Started with some shallots and garlic.  Did not have enough shallots so I used Maui Onions too.  Added mushrooms and cooked until tender.  Deglazed the pan with some white wine and reduced.  Added some chicken stock and reduced again then put in 1/4 cup of heavy creme.  Added some fresh Thyme and cooked until thickened.  Dredged the Veal in flour and sautéed for one minute on each side.  Served up with some pasta.  Entire family enjoyed this dish.  The Veal was under $10 so the entire meal for three came in just over $25.

MIXED PASTA WITH THE MUSHROOM CREME SAUCE IN
THE PAN AND THEN TOPPED WITH VEAL

SAUTE SHALLOTS, ONIONS,  GARLIC AND SAGE IN OLIVE OIL
ADD SLICED MUSHROOMS
COOK MUSHROOMS UNTIL TENDER
DEGLAZE WITH WHITE WINE AND REDUCE
ADD CHICKEN STOCK - REDUCE AND THEN ADD CREME
AND FRESH THYME.  ADD SALT AND PEPPR TO TASTE.
SIMMER SAUCE UNTIL THICKENED
THINLY SLICED VEAL SCALLOPS WERE ON SALE
DREDGE THE VEAL IN FLOUR SEASONED WITH SALT AND PEPPER
SAUTE VEAL IN OLIVE OIL FOR ABOUT 1 MINUTE ON EACH SIDE

VEAL SCALLOPINI WITH TAGLIATELLE PASTA

VEAL SCALLOPINI
WITH TAGLIATELLE 
DINNER AT HOME

I did not want steak or fish and was kind of burnt out on chicken so I surveyed the meat department for something different.  A package of thinly sliced veal caught my eye so I bought it.  We simply dredged the veal in seasoned flour and sauteed it in butter and olive oil.  Removed the veal and deglazed the pan with white wine.  Added onions, garlic and mushrooms and sauteed for a few minutes.  Added some chicken stock, butter and capers to finish.  Served with some freshTagliatelle pasta that was on sale.  Entire meal for three was around $15.  This was a very simple and delicious dish that I will make again.

ONIONS, GARLIC MUSHROOMS PREPPED AND READY
$9 OF VEAL SCALLOPINI ALREADY POUNDED INTO THIN STRIPS
SAUTEED VEAL IN BUTTER AND OLIVE OIL 
COOKED ABOUT ONE MINUTE ON EACH SIDE
REMOVED VEAL, DEGLAZED PAN WITH WHITE WINE,
SAUTEED ONION, GARLIC AND MUSHROOMS.  ADDED CHICKEN
STOCK, CAPERS AND BUTTER TO FINISH
 
SERVED VEAL WITH FRESH TAGLIATELLE PASTA
