POTATO, LEEKS, CORN AND HAM SOUP

POTATO, LEEKS, CORN AND HAM SOUP
DINNER AT HOME

We had a lot of food leftover after Thanksgiving.  Leeks, Potatoes, Thyme and Shallots to name just a few things.  Thought of making a Potato and Leek Soup so I gave it a try.  Used a recipe but added Shallots, Corn and Ham to kick it up a notch.  End product was a smooth soup with nice potato flavor.
The ham really makes a difference and takes the soup to another level.

 POTATO, LEEK, CORN AND HAM SOUP

FOUR LEEKS, FOUR CLOVES OF GARLIC AND A FEW LARGE SHALLOTS
ABOUT 2LBS OF RUSSET POTATOES CUT INTO SMALL CUBES
PLACED THREE TABLESPOONS OF BUTTER IN POT AND THEN ADDED THE LEEKS, SHALLOTS,
GARLIC AND CORN.  COOKED DOWN FOR ABOUT 20 MINUTES

ADDED THE POTATOES
2 QUARTS OF CHICKEN STOCK
BAY LEAVES AND A FEW SPRIGS OF THYME.  BRING TO BOIL, REDUCE HEAT AND COVER
COOK ANOTHER 20 MINUTES OR UNTIL POTATOES ARE COOKED THROUGH.
ADD SALT AND PEPPER.  REMOVE THYME AND BAY LEAVES
MIX UNTIL SMOOTH 

ADD ABOUT A CUP OF HEAVY CREAM
ADDED CHOPPED SPIRAL SLICED BACON WE HAD AS LEFTOVERS.  SIMMER
DELICIOUS POTATO, LEEK, CORN AND HAM SOUP

I love Vietnamese Spring Rolls and Banh Mi Sandwiches.  When I saw there was a place near home that sells pretty much just those items, we had to try it.  The No Name BBQ Sandwich is a no frills and very simple place with a very limited menu.  Aside from the Sandwiches and Spring Rolls the only thing you can get here is Shave Ice.  The staff is very friendly and 100% Vietnamese.  They came to our table to ask if we liked the food and one of the cooks came out to apologize for a brief delay because she was filling a takeout order.  She asked us our names and thanked us for eating here.
While we did have a little wait, it was not extreme.  We started with the Spring Rolls ($7.99) which were piping hot and served with Lettuce, Noodles, Basil, Pickled Vegetables and Hot Sauce.  We wrapped the Spring Rolls in the Lettuce and added the other items to make a little burrito.  I liked the Spring Rolls but my Wife said they were nothing special.  Next up we tried the BBQ Beef Sandwich ($7.99).  First off we loved the bread.  The Beef was delicious and the Pickles put this sandwich over the top.  Loved it.  The Vietnamese Sandwich ($7.99) was the one we were really waiting for.  We loved the Pate but it was only on the end of the sandwich so you did not get the flavor in every bite.  The only thing missing to make this sandwich really great is to MORE pickled vegetables.  This is something we both wished were in the sandwich.  While I wanted this to be my favorite Vietnamese Banh Mi, it missed the mark by a bit.  Would still prefer the Bale Special Sandwich.

I visited Vein at Kakaako last month for lunch and loved the Classic Napolitana Pasta.  Told my Wife about it and she went for dinner with her Mom while I was on a business trip.  She ordered the Caccio E Peppe Pasta and loved it.  She made it a point to return to Vein when my Daughter was back in town.  Well, she is back so we went for dinner along with her friend.  Started by ordering all four appetizers for the table.  First up was the Trio of Bruchetta ($12).  The star of this trio was the Roasted Mushroom Medley with Truffle.  Delicious mushrooms.  The Grilled Spanish Tako with Warabi Chimichurri Sauce ($24.50) was expensive for sure but we loved the flavors.  The Tako was cooked perfectly.  The Clams Pomodoro ($15) looked great but the broth was a bit bland and did not have that taste that makes you want to lap up every drop with bread.  The Bone Marrow with Uni Butter ($26) was again expensive for an appetizer but the rich, deep flavor was a hit with everyone at the table.  For entree's, I went for the Classic Napolitana again ($19.50).  Like my previous visit, the Pasta was cooked perfectly and the sauce was delicious.  My Wife and Daughter both had the Caccio E Peppe ($17.50) which they both said is the best and closest to what we enjoyed in Italy.  Our friend enjoyed the Rib Eye Florentina ($36) which was perfectly cooked and seasoned.  Service was excellent and they are dog friendly so we brought our dog.  Got to say I really like this place.  Actually would not mind eating the Pasta again today.

Last football game of the regular season and I finally got to use my season tickets for the first time this year.  Thankful that my Daughter and her friend wanted to go with me.  My seats are great, the beer is cold and the Bows beat Army big time.  Not a bad night!

Driving home from the Windward side of the Island and my Wife suggested we stop for a pizza at Pieology.  At first we were going to order one pizza to share and then my Wife decided to get her own.  I ordered my pizza with Pepperoni, Sausage, Red Onion, Jalapeño and Pineapple.  I like the Pieology thin and crispy crust and flavor of their sauce.  Makes for a good pizza for around $12.
