PASTA WITH CLAM SAUCE

DINNER AT HOME

Gotta be honest, my Pasta with Clam Sauce recipe is pretty darn good.  Even my wife who doesn't like Clam Sauce said this was delicious.  I used a combination of Chopped Clams and Razor Clams.  Normally serve with Linguine but we only had Thin Spaghetti which worked fine.  I didn't add any Tomato Sauce as in the recipe below.

LINGUINE WITH CLAM SAUCE

Here a a very simple and delicious recipe for Linguine with Clam Sauce that you can have on the table in around 30 minutes.  I have used Chopped Clams and Fresh Clams or a combination of both.  This version uses Chopped Clams that I had in the refrigerator.  Simply dice up a bunch of garlic and shallots and then sauté them in a little Olive Oil and Butter.  I add a few pinches of Crushed Red Pepper to add a little heat.  When the Shallots and Garlic are cooked deglaze the pan with White Wine.  Let the wine reduce and then add in the Chopped Clams with all the Clam Juice.  Let this heat through and simmer.  Add in a small can of Tomato Sauce (yes Tomato Sauce) and simmer on low heat.  To finish I added about three tablespoons of butter.  I love this dish and the sauce gets better after being refrigerated for a day.

LINGUINE WITH CLAM SAUCE

WHITE WINE, CHOPPED CLAMS W/JUICE, PARSLEY, TOMATO SAUCE, GARLIC AND SHALLOTS
SAUTE THE GARLIC AND SHALLOTS IN A LITTLE BUTTER AND OLIVE OIL
ADD CRUSHED RED PEPPER IF YOU LIKE SOME HEAT
COOK UNTIL THE SHALLOTS ARE TRANSLUCENT 
DEGLAZE WITH WHITE WINE AND LET REDUCE
ADD IN THE CHOPPED CLAMS WITH ALL THE CLAM JUICE AND HEAT THROUGH - SIMMER
ADD THE SMALL CAN OF TOMATO SAUCE AND HEAT THOROUGHLY - SIMMER ON LOW HEAT

LINGUINE WITH CLAM SAUCE

LINGUINE AND CLAMS

Celebrated a very special family member birthday with Linguine and Clam Sauce.  Simple, fresh ingredients cooked up in only a few minutes.  Entire meal for three was under $40.  The fresh clams in shell were half of the cost.  Could have skipped these and just used the chopped clams to save money.  While my presentation was less than perfect, the flavor of this dish was excellent.  Adding the small can of tomato sauce really makes a difference and adds flavor.  The red color of the tomato sauce disappears when the sauce is done.  I soaked the clams in water for about one hour.  You will be amazed how much dirt comes out of the clams.  The water was black when finally rinsed out.  This is a dinner that you can make with just about anything you have in the refrigerator.  Easy and delicious.

CLAMS IN SHELL, CHOPPED CLAMS, WHITE WINE, GARLIC,
 SHALLOTS, PARSLEY, FRESH OREGANO, LEMON,
TOMATO SAUCE AND CRUSHED RED PEPPER FLAKES
SAUTE SHALLOTS AND GARLIC IN OLIVE OIL AND BUTTER
DEGLAZE PAN WITH WHITE WINE AND REDUCE
ADD CHOPPED CLAMS AND JUICE - SIMMER
ADD CAN OF TOMATO SAUCE - NOT KIDDING THIS IS GOOD
ADD FRESH OREGANO, PARSLEY AND CLAMS
COVER UNTIL CLAMS OPEN
CLAMS OPEN AND THE SAUCE IS DONE
BURNT THE BREAD A BIT BUT THE DISH WAS GOOD
