After not enjoying meals at two restaurants at the Fairmont Banff Springs, it was nice to enjoy food that was actually good.  Liked the Bistro Salad and especially the Champagne Vinaigrette.  Seafood Bouillabaisse was really good and perfect on a very cold day.  My Daughter loved the French Onion Soup.  Service was good.

FRENCH ONION SOUP

DINNER AT HOME

Made French Onion Soup again on a cool Hawaii night.  Wow...this hit the spot and was so delicious.  Entire family loved it.  Highly recommend you try this recipe.  I top with Garlic Buttered Baguettes and a blend of Mozzarella and Gruyere Cheese.

When my co-workers said they were going to La Tour Cafe for lunch I jumped online to see if they had any low carb options.  The only thing I could find was a few salads and French Onion Soup.  Went for the soup and it was pretty good.

FRENCH ONION SOUP

DINNER AT HOME

We had a large bag of Onions and Gruyere cheese leftover from Thanksgiving and I immediately thought of making French Onion Soup.  Found a great recipe and went for it.  This came out incredible and was one of the best French Onion Soups ever.  I cannot believe so many restaurants make terrible French Onion Soup.  It is so easy to make this one and you will love it!  I added a tablespoon of Brandy in addition to the Red Wine.

FRENCH ONION SOUP TOPPED WITH TOASTED BAGUETTE AND GRUYERE CHEESE

COOK DOWN THE ONIONS IN BUTTER

TOOK ABOUT ONE HOUR TO GET THEM REDUCED AND LIGHTLY BROWNED

ADDED THE GARLIC

ADDED BRANDY AND RED WINE

ADDED BEEF AND CHICKEN BROTH

ADDED BAY LEAF AND THYME

COVER AND LET COOK ON LOW HEAT FOR ABOUT 20 MINUTES

POURED INTO DISHES

TOPPED WITH GARLIC BREAD THAT I PREVIOUSLY TOASTED

TOPPED WITH GRUYERE AND PARMESAN CHEESE

FRENCH ONION SOUP

DINNER AT HOME

Boy was I surprised how good this French Onion Soup came out.  Absolutely delicious.  I read a bunch of recipes and combined what I liked about each one of them into my own concoction.  Probably could not duplicate this again because I did not write down what I was doing and did not use exact measurements.  Just winged it when I came home and saw a huge bag of onions on the counter.  My Wife said they were on sale so she bought the big bag.  With this many onions in the house I had to do something.  French Onion Soup came to mind.  Topped the soup with garlic bread an Gruyere Cheese.  Entire family loved it and we all agreed it was better than most restaurants we have visited.

DREW'S FRENCH ONION SOUP

SO CHEESY AND SO GOOD

LARGE BAG OF ONIONS

I THINK I USED FOUR OR FIVE ONIONS AND 5 CLOVES OF GARLIC

COOKED THE ONIONS DOWN IN BUTTER AND OLIVE OIL

ADDED WHITE WINE TO DEGLAZE.  ALSO TABLESPOON OF BROWN SUGAR
AND PEPPER


TWO CONTAINERS OF BEEF BROTH, BEEF BULLION BASE, FRESH THYME AND BAY LEAF GOES INTO THE POT.  SIMMERED FOR A FEW HOURS

REMOVE TYME SPRIGS AND BAY LEAF

PUT SOUP IN OVEN SAFE DISH

TOP WITH GARLIC BREAD

GRUYERE CHEESE

PLACE IN BROILER TO MELT CHEESE AND BROWN UP A BIT

INTO THE BROILER

CHEESE IS MELTED - LETS EAT!

TONY ROMA'S - AIEA

Enjoyed a really good business lunch at Tony Roma's in Aiea.  Service and food was good.  The meal started with a very fresh and warm loaf of bread served with butter.  I went for the House Salad ($2.99) and my customer enjoyed the French Onion Soup ($5.99).  The soup looked good and the cheese hung from his chin for a few minutes before I told him it was there.  Looked real funny.  We split a Half Rack of Tony's Classic Ribs ($24.99).  The ribs are served with two side dishes.  My friend took white rice and I had the Cole Slaw.  The waitress split the ribs and sides on two plates.  This was nice.  The Kicken Shrimp Appetizer ($9.99) is basically a large glass of lettuce topped with about a dozen shrimp with a not spicy at all sauce.  Pretty bland.  Salad and ribs would have been plenty.
