DINNER AT HOME
These stuffed Zucchini Boats were absolutely delicious. I hallowed out the Zucchini and coated them with a mixture of Olive Oil, Garlic and Oregano. Let them sit. Made mixture of Ground Beef, Ground Pork, Onions, Carrots, Bell Pepper, Garlic, Jalapeño and Bok Choy because we had some. Added Tomato Basil Sauce and simmered for one hour. Poured the mixture into the Zucchini's that I grilled on both sides until they were browned and soft. Topped with Pepperoni slices, Mozzarella and Parmesan Cheese and let that melt inside the closed BBQ. Added a bit of fresh Basil and Italian Parsley. Yummy!
