GRILLED SHUTOME WITH WHITE WINE, BUTTER AND CAPERS SAUCE

DINNER AT HOME

Fresh fish is always on our dinner menu on Good Friday.  Not much of a fish selection at the market on this day but they did have some fresh Shutome (Swordfish) which looked good.
Simply grilled the fish with a little Hawaiian Salt, Pepper and Lemon/Garlic Flavor God Seasoning.  Made a White Wine, Butter, Shallot, Garlic and Capers Sauce that elevated this dish to restaurant quality.  Roasted Brussels Sprouts and Carrots with a little Olive Oil, Garlic, Salt and Pepper.  Actually added Bacon but my Wife removed it all because it was Good Friday and no meat products can be eaten.  Delicious dinner on the lanai.

SWORDFISH WITH WHITE WINE BUTTER SAUCE

DINNER AT HOME

Once again I went on Amazon and ordered groceries for dinner.  The items were delivered for free the next afternoon.  Text alerts notified me when the order was being pulled and if anything was out of stock.  When an item is not available you receive a text with options to replace. You simply check yes or no if you want the item and your order is changed.  I ordered Swordfish because it was on sale.  We were amazed how fresh the fish was.  Me and my Wife agreed that this was one of the freshest, moistest pieces of fish we have ever eaten.  Now the Chef (me) gets some credit for cooking it perfectly on the grill.  Seriously this fish was amazing.  Served with Garlic Mashed Potatoes, Grilled Asparagus and Pineapple. The Grilled Pineapple went really well with the Swordfish.  My White Wine Butter Sauce included a lot of Shallots and Garlic.  This was a delicious dinner!

Looking into the fresh fish department at our local supermarket I saw some super fresh Shutome which is Swordfish at a pretty good price.  Grilled it with a little salt, pepper and lemon/garlic seasoning.  Made a White Wine and Butter Sauce with Shallots and Garlic.  The fish was moist, meaty and so delicious.  Light flavor with no fish taste.  This was good.  Really good!

SWORDFISH WITH MUSHROOM CREAM SAUCE

SWORDFISH WITH MUSHROOM CREAM SAUCE

When I saw fresh Hawaiian Swordfish at the market for around $5 per pound, I grabbed a few fillets for the family dinner.  When I can put a restaurant quality meal on the table for three for under $15 it makes me happy.  This meal would cost at least $30 for each plate in a Hawaii restaurant.  Super fresh fish and a good sauce are the keys here.  I make my cream sauce with garlic, shallots, mushrooms, butter, olive oil, white wine and cream.  Sauce the garlic and shallots in a combination of  olive oil and butter.  When cooked add the mushrooms and cook until tender.  Deglaze the pan with about a 1/4 cup of white wine and reduce until alcohol cooks off.  Add a few tablespoons of butter and cream plus salt/pepper.  So easy and so delicious!!!  Don't overcook the fish.  I grill to sear both sides and then pop in the oven at 350 degrees for around 10 minutes.
