Turtle Bay Resort is a little gem on the North Shore of Oahu.  It is worlds away from the hustle and bustle of Waikiki and a great place to get away even for a local.  The drive to Turtle Bay takes a little over an hour from Honolulu.  I like the drive because you go by Waimea Bay, Haliewa Town and Sunset Beach.  The drive can be much longer during the winter surf season when cars pack the one lane road that leads to various surf competitions at Banzai Pipeline and Sunset.  Once you get to Turtle Bay be prepared to take your pulse down a notch or two.  The place is relaxing.  We played the Palmer Course at Turtle Bay Golf Resort.  This is listed as one of the best golf courses in Hawaii and one of the 100 Best Public course in the U.S.  I thought the course was challenging but it was not my favorite course on Oahu by far.  While there are a few glimpses of the ocean along the course, it does not give you the big dramatic coastal views like Manele Bay on Lanai.  There is some water on the course but not much.  Many of the holes are lined with bunkers.  There is a restaurant named Lei Lei's Bar and Grill next to the Pro Shop.  You can enjoy a sit down meal there or sit at the bar overlooking the putting green.  I sampled a Bloody Mary at the bar and it was pretty good.  The restaurant makes sandwiches that are sent out with the beer cart that stays parked near the 9th hole.  The sandwiches were fresh and good as far as golf cart sandwiches go.  I had the Turkey Sandwich served with lettuce, tomato and two types of cheese for $7.50.  Washed it down with an ice cold beer.  Not a bad day in Paradise

BEEF BROCCOLI

BEEF BROCCOLI
DINNER AT HOME

This simple and delicious dish will please the family and make you eat a good portion of broccoli.
We used some rib eye steak that we had in the refrigerator and in minutes had a healthy and delicious meal that the entire family loved.  

BEEF BROCCOLI

THINLY SLICED RIB EYE STEAK
BEEF WITH CORN STARCH, GARLIC POWDER, GROUND GINGER, SALT AND PEPPER
SAUTE BEEF OVER HIGH HEAT
COOK BEEF AND THEN REMOVE FROM PAN AND SET ASIDE
ADD A BIT OF OLIVE OIL TO PAN AND SAUTE ONIONS
ADD BROCCOLI TO ONIONS IN PAN AND SAUTE UNTIL DONE
ADD THE COOKED BEEF TO THE BROCCOLI AND ONIONS
POUR IN SOY SAUCE, WATER, CORN STARCH, BROWN SUGAR AND GROUND GINGER
FINISHED BEEF BROCCOLI LOOKED GOOD AND TASTED GREAT!

SHABU SHABU WITH SEAFOOD, VEGETABLES AND STEAK

DINNER AT HOME

This is one of our favorite dinners when entertaining friends and family.  It just takes a little prep work cutting vegetables and you have a fun and healthy meal that will get everyone eating more vegetables.  Yes you use some butter so it is not fat free.  You can substitute cooking spray for the butter but you will really lose a whole lot of flavor.  The good thing about this dinner is that you can use whatever you have in the refrigerator and it will come out great with the dipping sauce.  The sauce is called Batayaki Sauce (Soy Sauce, Ginger Juice, Lime Juice, Brown Sugar, Water, Daikon and Dashinomoto Seasoning).  We added some toasted sesame seeds too.  Cooking is simple.  Add butter to your Indoor Grill Pan and then add the seafood, vegetables and beef.  We use a long pair of wooden tongs to turn the food while cooking.  Make sure you salt and pepper all of the food to taste.  As you get going, let some of the diners take turns cooking.  Everyone (even children) will get into cooking on the grill so you have some fun and get everyone involved.  This is a great dinner party!
I know this is not traditional Shabu Shabu where the food is cooked in a broth.  Just our way of doing it at home.

FRESH MAHI MAHI AND CLEANED SHRIMP
GREEN ONIONS, EGGPLANT, BEAN SPROUTS, BELL PEPPERS, ONION, NAPA CABBAGE
THINLY SLICED BEEF
MORE VEGGIES - ASPARAGUS, MUSHROOMS AND ZUCCHINI
DIPPING SAUCE - DIP ALL VEGETABLES, SEAFOOD AND MEAT IN THIS SAUCE
Batayaki Sauce (Soy Sauce, Ginger Juice, Lime Juice, Brown Sugar, Water, Daikon and Dashinomoto Seasoning). 
VEGETABLES, SEAFOOD AND MEATS LAYED OUT ON TABLE
SIMPLY ADD BUTTER TO HEATED PAN
ADD MEAT AND SEAFOOD TO PAN AND SAUTE.  SALT AND PEPPER TO TASTE
START THROWING IN SOME VEGETABLES OR WHATEVER YOUR GUESTS DESIRE
KEEPING ADDING BUTTER TO TASTE.  MAKE SURE YOU SEASON ALL FOOD WITH SALT AND PEPPER
