SQUID INK PASTA WITH SHRIMP


DINNER AT HOME

This Squid Ink Pasta with Shrimp was easy to make, light and delicious.  After making the sauce, I added the uncooked Shrimp and let cook in the sauce.  This is the second time enjoying this in as many weeks.  Winner!

The entire family loves the Pasta with Tomato and Onion recipe made a few weeks ago and posted on this blog.  The recipe is a winner and now everyone craves it once a week.  So this week, I changed it up a bit and added Grilled Garlic Shrimp.  Delicious!

PASTA WITH GARLIC SHRIMP

PASTA WITH GARLIC SHRIMP

After eating a few pasta dishes out at restaurants and paying too much for minimal flavor I hit the kitchen and made my own pasta dinner for a fraction of the cost.  This simple dish was delicious.
Included shallots, garlic, onions, bell pepper and carrots because I had these items in the refrigerator.  Sautéed the veggies in olive oil and then added one jar of Bertolli's Tomato and Basil Sauce.  Added fresh basil and Italian parsley from the garden.   In a separate pan I sautéed chopped garlic and a little crushed red pepper in butter and olive oil.  Added the shrimp and cooked for just a few minutes.  Cooked the pasta to al dente and topped with sauce and shrimp.  Entire family loved this quick, easy and inexpensive dish!

PASTA ALFREDO WITH SHRIMP AND HAM

PASTA ALFREDO WITH SHRIMP AND HAM

Once again I had to come up with dinner with only the things we had in the refrigerator.  I had some leftover Angel Hair Pasta and a quarter bottle of Alfredo Sauce plus a few slices of ham and some frozen shrimp.  I thawed the shrimp and put on my thinking hat.  Ok..I will chop up some shallots that were getting old along with some garlic to start.  Sauteed them up in some butter and olive oil and then added the shrimp.  Cooked the shrimp until about half cooked (don't overcook the shrimp) and deglazed with some white wine.  Removed the shrimp and set aside.  I then poured my Alfredo Sauce in the pan and added the ham that I had cut into small strips.  Heated and then added the shrimp back into the pan.  Placed the pasta on a plate and then covered with a bit of sauce and the shrimp.  Added a little Parmesan Cheese.  This dish was DELICIOUS.  A big home run and hit with entire family.  So fast and easy too using leftovers.

PASTA ALFREDO WITH SHRIMP AND HAM

SHALLOTS, HAM, GARLIC, SHRIMP AND 1/4 BOTTLE OF ALFREDO SAUCE
PARMESAN CHEESE
LEFT OVER ANGEL HAIR PASTA
SAUTE SHALLOTS AND GARLIC IN BUTTER AND OLIVE OIL
ADD SHRIMP
COOK SHRIMP UNTIL ABOUT HALF COOKED THROUGH AND DEGLAZE WITH WHITE WINE
MIX THROUGHLY AND DO NOT OVERCOOK THE SHRIMP.  REMOVE SHRIMP AND SET ASIDE
GARLIC, BUTTER, OLIVE OIL AND WHITE WINE
ADDED ALFREDO SAUCE
ADDED HAM
ADDED SHRIMP BACK INTO SAUCE AND HEATED 
PASTA ALFREDO WITH SHRIMP AND HAM

There is nothing like a good pasta dish to end the day.  I love all things pasta and could probably eat it every day of the week.  We always keep a good supply of Bertolli Pasta Sauce in the pantry so we can easily cook up a pasta meal with shrimp, chicken, vegetables or whatever else is in the refrigerator.  I sauteed some onion, carrots, celery and garlic and then cooked the shrimp and added it to a warmed Bertolli Tomato and Basil Sauce.  This simple only took minutes and was delicious!

LOBSTER - SANTA MONICA PIER

After enjoying the Pier scene in Santa Monica, we ventured up to Ocean Avenue and found Lobster.  This award winning seafood restaurant was voted one of the best Seafood Restaurants in Los Angeles.  We were just looking for some fresh oysters but ended up having a delicious lunch with an incredible view of the Pacific.  We did not have reservations, but the man at the reception desk said they would have a table ready in a few minutes.  We were taken upstairs to a beautiful restaurant with a commanding view of the Santa Monica Pier and the crisp, clear blue Pacific Ocean.  Does not get much better than this.  We started with the Oyster Sampler ($19.50).  There were around eight fresh shucked oysters on a platter of crushed ice.  These were delicious but did not hold a candle to the fresh Cherry Stone Clams ($3.50 each).  Huge pieces of fresh clams that everyone said were actually two clams per shell.  They were sweet and delicious.  Actually the best fresh clams I have ever tasted.  I tried a bowl of Clam Chowder ($10.00).  It was thick and full of clams and a lot of potatoes.  Not the best chowder I have every had but really good.  Also tried a Lobster Roll ($24.00).  Loved the bread and thought this was just o.k. for the money.  My girls absolutely loved the thin and crunch french fries served with the Lobster Roll.  Dad enjoyed the Jumbo Crab Cakes ($26.00).  These were huge crab cakes that were stuffed full of lump crab meat and topped with a nice salad.  Shirley tried the Fresh Filet of Sole ($26.00).  The fish was cooked perfectly.  Meaty and delicious.  Served with mashed potatoes and some artichokes.  Heide tried Crab Louis Salad ($18.00).  Large pieces of lump crab meat and a nice fresh salad.  Keli went for the Pasta with Shrimp ($10.00).  She loved it as usual.  The wines by the glass here were quite expensive.  The Cake Bread Chardonnay was $20 per glass!  This is an expensive lunch but a great location with good food and service.
