We love this simple Pasta recipe that is now a family favorite.  Added Grilled Shrimp to the Tomato and Onion Sauce and it was delicious.

KELI'S BIRTHDAY DINNER

A week ago I asked my Daughter Keli what she wanted to eat for her Birthday.  To my surprise she said "Pasta".  But then she went on to say she wants her three favorite pasta dishes all at once.  That means making Pappardelle with Lobster, Mushrooms and Sage, Spaghetti with Beef/Sausage Ragout and Fettuccine with Tomato and Onion.  Since these were my favorites too, I was up to the challenge but it took my Wife's help to pull off getting everything cooked and plated at the same time.  We did it and it was oh so good.  Served the pasta with Garlic and Parmesan toast.  Cherished this dinner as I sat and saw my Daughter all grown up.  Life is going by so fast and the memories of her growing up and changing each year are etched in my heart and mind.  I miss my baby but am ready to watch the next chapter in her life unfold.  Happy Birthday Keli.  Daddy loves you!

PASTA WITH ROASTED TOMATOES AND ONION

PASTA WITH ROASTED TOMATOES AND ONION
DINNER AT HOME

 This simple Pasta dish that I learned from Lidia's Kitchen on PBS was an instant family favorite and one of the best pasta dishes of my life.  Better than a restaurant and so quick and simple to make.  
Start by cutting Sweet Onions and Tomatoes.  Sprinkle with salt and pepper.  Place a dab of Tomato or Sun Dried Tomato Paste on the Tomatoes and spread all around.  Hit everything with a little Olive oil.  Bake at 375 degrees for 30-40 minutes or until everything is slightly browned.  Remove and rough chop.  In a large pan cook 3-4 cloves of Garlic in Olive Oil.  Add a sprinkle of Crushed Red Pepper for heat.  Add the Onion and Tomatoes to the Garlic and simmer/stir on low heat.  Salt and Pepper to taste and add some fresh chopped Italian Parsley and Basil.  Cook some Spaghetti until al dente.  Ladle some water from the Spaghetti into the sauce.  Continue to add water to the sauce until you have a thickness and consistency that you like.  Drain the pasta and add to sauce.  Coat spaghetti with sauce and plate.  Top with more fresh Italian Parsley, Basil and Parmesan Cheese.  Guarantee you will love this dish.  We made it again a few days later because we were all craving it.  Had a friend over and she helped make this dish - loved it and will be making it at her home.

PASTA WITH ROASTED TOMATOES AND ONION

ONIONS AND TOMATOES.  SALT, PEPPER, SUN DRIED TOMATO PASTE AND OLVIE OIL
BAKED AT 375 FOR AROUND 35 MINUTES

 ROUGH CHOP THE TOMATOES AND ONION 

 SAUTE GARLIC WITH A LITTLE CRUSHED RED PEPPER FLAKES

 ADD THE CHOPPED TOMATOES AND ONION PLUS A FEW LADLES OF THE PASTA WATER.  STIR.

ADD THE PASTA AND MIX WELL
