SQUID INK PASTA WITH SHRIMP


DINNER AT HOME

This Squid Ink Pasta with Shrimp was easy to make, light and delicious.  After making the sauce, I added the uncooked Shrimp and let cook in the sauce.  This is the second time enjoying this in as many weeks.  Winner!

SQUID INK PASTA WITH BUTTER POACHED LOBSTER AND SHRIMP


DINNER AT HOME

This was one of the best Pasta dishes of my life.  Ten times better than most restaurants in Hawaii.  Definitely makes my list of favorite home cooked meals.  Made this on National Pasta Day and it was well worth the carbs!

We all enjoyed the food at Taormina in Waikiki.  Service was great and the food came out quickly.  Portions were large enough to share which I highly recommend so everyone can enjoy a variety of flavors.  Loved the meaty Steamed Clams in a buttery broth.  The Eggplant
Caponata was a big surprise as it was absolutely delicious.  Never would have thought cold Eggplant could taste so good.  The Insalata del Bosco was big enough for two or three people and the flavors of the fresh Beets and Pear were fantastic.  I went for the Truffle Carbonara with fresh Truffles shaved at the table.  The dish was good but the pasta was clumpy.  Also think they added cream to the Carbonara which to me is a no no.  The Uni Pasta was rich and delicious.  The Bolognese was really good and definitely better than most Italian restaurants.  The Squid Ink Pasta with Seafood was also really good.  Everything was good here and I would definitely return.

SQUID INK PASTA WITH SHRIMP AND SCALLOPS

This is one of my Wife's favorite dishes.  When she asked me to make it again I said "of course dear - what time would you like dinner".  Happy Wife.  Happy Life.  I really love this dish too.  The sauce really packs some flavor and is definitely restaurant quality.

SQUID INK PASTA WITH LOBSTER , SHRIMP AND SCALLOPS

My Wife requested Squid Ink Pasta for her birthday dinner so I made it the way I have done before.  A Garlic and Tomato Sauce with Lobster, Shrimp and Scallops.  Tasted so good this time but maybe that is because I have not eaten pasta like this in over a month since going low carb.  I only ate 1/4 of the pasta on my plate but made sure I finished the Lobster.  
This dish delivers on flavor and presentation.

This dinner was perfect.  Loved the food and eating on our lanai with my girls.  It does not get better than this in life.  Sitting with the family on a warm Hawaii night and eating food we prepared is what I love most.  For this dish I sautéed Garlic and Shallots in Olive Oil and then added Tomato Paste and some chopped up Sun Dried Tomatoes.  Added Cherry Tomatoes and some white wine, lemon juice and butter.  Let the sauce reduce and then added some of the pasta water.  I had cooked the Lobster, Scallops and Shrimp and set aside.  Made sure that I did not over cook the seafood because I placed it in the sauce to coat.  Added the Pasta and boom....a great Seafood and Pasta dinner!

SQUID INK LINGUINE WITH SCALLOPS, SHRIMP, TOMATOES AND GARLIC

SQUID INK LINGUINE WITH SCALLOPS, SHRIMP, TOMATOES AND GARLIC

Watching a cooking show and saw a Squid Ink Pasta dish being made in Italy.  Looked so good that I bought some Squid Ink Linguine (on Amazon) and started Googling recipes.  Since most recipes used Shrimp, I made my own variation based on the recipe below.  I sautéed a lot of chopped Shallots and Garlic in Olive oil and Butter.  Added Tomato Paste and chopped Sun Dried Tomatoes.  Sautéed for a minute or two and then added the Cherry Tomatoes.  Let them cook a bit and then added 1/2 cup of White Wine and 1/2 cup of Chicken Stock.  Let this reduce and added Salt and Pepper.  Added Butter, Lemon Juice (go easy on the Lemon Juice.  Add a little then taste and adjust) and Zest stirred and simmered.  Added chopped Basil and Italian Parsley (from our garden!). Separately I seasoned the Scallops and Shrimp with Salt, Pepper and a little bit of Lemon/Pepper.  Pan seared the Scallops in butter for just two minutes on each side removed and  cooked the shrimp.  Removed and set aside.
Cooked the pasta and added a few ladles of the pasta water to the sauce.  Simmered.  Added the cooked al dente pasta to the sauce and stirred it all up.  Plated with the pasta and sauce then topped with Scallops, Shrimp, fresh Basil and Parsley.  This was delicious and really loved by my Wife.
