CHICKEN AND CABBAGE SOUP

LUNCH AT HOME

We had a lot of Cabbage, Potatoes, Carrots and Onions leftover from our St. Patrick's Day Corned Beef and Cabbage dinner.  Did not want to waste it so I made this delicious soup by adding diced Chicken, Chicken Stock and sautéed diced Carrots, Celery and Onion.  This was way better than I expected and would make again and again.

CHICKEN AND RICE SOUP

Had less than half of a Rotisserie Chicken left and decided to make Chicken Soup.  Started by sautéing onion, shallots, garlic, carrots and celery in a little olive oil.  Placed the entire chicken carcus with meat and skin in the pot with vegetables and covered with chicken stock.  Brought it to a boil and then turned the heat down and simmered for about half an hour.  Removed the chicken and cooled.  Pulled all the chicken off the bones and shredded.  Also removed skin and threw it away.  Put all the chicken back in the pot and turned heat up to a boil.  Added four tablespoons of Better than Bouillon Chicken Base and  half a cup of Wild Rice, salt, pepper and thyme.   Turned down heat and simmered until rice cooked.  Probably one of the best Chicken Soups I have had in years.

Cooked up a delicious batch of Chicken Soup using the remainder of a Costco Rotisserie Chicken, Vegetables and Chicken Stock.  Soup came out fantastic.  Paired the soup with some leftover Honey Baked Ham from Easter.  Delicious little homemade meal that the entire family loved.

CHICKEN SOUP WITH VEGETABLES AND PASTA
DINNER AT HOME

We always buy the Rotisserie Chicken's from Costco or Sams Club.  After eating most of the meat, I take all the bones and leftover meat and make Chicken Soup.  Usually add a can or two of diced chicken breasts and all of the vegetables we have in the refrigerator plus peas.  Always use onions, celery and carrots at a minimum.  I add cooked pasta to the soup that is al dente at the very end.  Add pasta too soon and it gets mushy.  Love this hearty and thick soup so much!

I cooked up some delicious Chicken Soup using what was left from a Costco Rotisserie Chicken, fresh vegetables, peas and corn that we had in the fridge.  Paired the soup with a Philly Cheese Steak that we also picked up at Costco.  My Daughter loved this meal and now is addicted to the Cheese Steaks.

STAGE DELI - NEW YORK CITY

After the Christmas Spectacular Show we decided to try Stage Deli because it was very close to the theatre.  Stage is one of those iconic Deli's in the same league as Carnegie and Katz.  We usually dine at Carnegie Deli so this was a good time to check out the competition.  We ordered Sandwich #33 called Rudy Guilanni.  Heaps of pastrami, corned beef, swiss and muenster cheese, coleslaw and Stage Deli famous Russian Dressing ($23.95). The sandwich is not a huge as the ones at Carnegie, but the flavor was delicious.  The meats were packed with flavor and the dressing brought it all together for a nice little taste bomb.  Only complaint was that there was very little cole slaw on the sandwich.  Would liked to have had more.  Keli ordered Chicken Soup ($7.95).  It was full of thick noodles, chunks of chicken and filled with chicken flavor.  This is a very good bowl of soup.  I ordered a Knish because I see them everywhere in New York and just had to try one.  The round Knish ($5.95) was a large ball of potatoes seasoned and then baked to a crust on top.  We loved the Knish.  You could really taste the potato, spices and pepper.  Simple and really delicious.  We spread some on our sandwich and even had Keli eating the thing.  Staff here was friendly.
