CHICKEN AND BEAN TOSTADA

Damn...this was good.  Used Rotisserie Chicken that I shredded and mixed with sautéed onions, jalapeños and a can of Mexican Style Tomatoes.  Let it simmer for an hour and crush up the tomatoes really good.  In another saucepan I sautéed lots of onions and jalapeños and then added a can of Spicy Refried Beans.  Mixed and simmered until the beans were warm and creamy.  Layered the beans first, then the chicken, hot sauce, lettuce, cheese Pico de Gallo and topped with Avocado.  Probably one of my favorite Tostadas ever.  Use the pre-cooked Tostadas so you don't have to use oil and fry.

SPICY BEAN TOSTADAS - DINNER AT HOME

I was craving a good Bean Tostada and decided to make them myself rather than going to one of Hawaii's terrible Mexican Restaurants and paying $10 for a tasteless piece of crap.  Grabbed my favorite Rosarita Spicy Jalapeño Refried Beans from Wall Mart and a bag of Guerrero Tostadas from the Supermarket.  I love to use the Guerrero Tostadas because they are pre-cooked which means I don't need to heat up a bunch of oil to cook corn tortillas.  These really save time and clean up time.  I love Rosarita Spicy Jalapeño Refried Beans right out of the can, but I also like to kick them up a notch by sautéing some onion and jalapeño in a little bit of Olive Oil.  Once the onions and jalapeño are cooked, I add the can of beans and heat it all up.  Spread the bean mixture onto the Tostada and then top with fresh lettuce, cheese and Pico De Gallo.  I always put a bunch of hot sauce on the beans before piling up the veggies.  These Tostadas are better than most Hawaii Mexican Restaurants and a fraction of the cost.

KICKED UP MY CAN OF ROSARITA REFRIED BEANS WITH SOME SAUTEED ONIONS AND JALAPENO
ADDED MY REFRIED BEANS TO THE COOKED ONION AND JALAPENO.
THIS MAKES A GREAT DIP FOR CHIPS TOO!
MADE FRESH PICO DE GALLO WITH FRESH TOMATO, JALAPENO, ONION, CILANTRO,
LIME JUICE, SALT AND PEPPER
SPICY BEAN TOSTADA WAS DELICIOUS!!
