I was shocked to walk down Wall Street and see a Taco Shop and there was no way I was not going to stop in and try the Tacos.  Oh my....so glad I did.  These Tacos and Tostadas were GREAT.  Oh how I wish we could have something like this in Hawaii.

These were some of the best Tostadas ever.  Great flavors from the Spicy Refried Beans, Shredded Chicken that I added Sautéd Onions, Garlic, Jalapeño, Tomatoes and Green Chilis to.  Topped with Cheddar Cheese, Lettuce, Pico de Gallo, Sour Cream and Cojita Cheese.

This was one of the best Tostadas of my life.  Loved it.  I started with a base of Spicy Refried Beans and then layered seasoned Shredded Chicken over the beans.  For the Chicken, I grilled Chicken Breasts and then shredded them by hand.  I sautéed the grilled Chicken with Onions, Bell Pepper, Garlic and Jalapeño.  Then added a can of Diced Tomatoes with Green Chilis.  Seasoned with Salt, Pepper and Flavor God Taco Tuesday Seasoning. After the Chicken and Beans, I always add Hot Sauce then top with Lettuce, Cheddar Cheese, Pico de Gallo, Avocado slices and some Cotijo Cheese.  So delicious I am having this for dinner again tonight.  Craving another one!

Damn...this was good.  Used Rotisserie Chicken that I shredded and mixed with sautéed onions, jalapeños and a can of Mexican Style Tomatoes.  Let it simmer for an hour and crush up the tomatoes really good.  In another saucepan I sautéed lots of onions and jalapeños and then added a can of Spicy Refried Beans.  Mixed and simmered until the beans were warm and creamy.  Layered the beans first, then the chicken, hot sauce, lettuce, cheese Pico de Gallo and topped with Avocado.  Probably one of my favorite Tostadas ever.  Use the pre-cooked Tostadas so you don't have to use oil and fry.

Last week was my week with my Wife cooking some of my favorite meals.  This week is her week so I asked her what she wanted for dinner.  We had half of a Rotisserie Chicken in the refrigerator and she said to make something using the Chicken so she could empty the fridge.  I made Shredded Chicken and Bean Tostadas which we both love.  Fried the Corn Tortillas and then covered it with heated Refried Beans.  Added a layer of Shredded Chicken that I hand shredded from the breast meat.  I sauted the chicken with Mexican Stewed Tomatoes and Green Chilis to add flavor.  Topped with Lettuce, Cheese and fresh Pico de Gallo.  Delicious!

Still craving the Mexican food after a trip to San Diego so I cooked up some delicious and filling Shredded Chicken and Bean Tostadas.  These are so good and when you buy the pre-fried Tortillas they can be made in minutes with no frying.  I top the Corn Tortilla with a layer of Spicy Refried Beans, then the Shredded Chicken, Hot Sauce, Lettuce, Cheese and Pico.

Cooked up some Shredded Chicken and made some delicious Tostadas.  Refried Beans, Shredded Chicken, Lettuce, Cheese and Pico de Gallo.  And of course some hot sauce.  Delicious!

Next to Juanitas and Roberto's for Mexican take out, I have eaten at Fidels probably more times than any other sit down restaurant.  Back in the day this was the place to go for great food at very affordable prices.  Going back now, the place seems larger.  There is a full bar and seating inside and outside. The food is still delicious.  Large portions, great prices and atmosphere.  I have always loved the salsa served with the chips here.  It taste just like old times.  Not spicy but full of flavor.  Love the salsa.  I rolled with a Shredded Beef Taco and Chicken Tostada Plate with Rice and Beans.  The Taco was filled with shredded beef and topped with cheese, lettuce and pico.  One of my favorite tacos ever.  The Tostada was just as good, but the shell got soggy and I had to eat it with a fork.  The rice and beans here are top notch.  My friend had half of a Tostada and it was huge.  A full plate load.  He loved it.  Another friend enjoyed the Tamale which he said was "great". This was a great meal.
