Taco Tuesday took a twist when I made these amazing Bean and Avocado Tostadas.
Far better than any Mexican restaurant in Hawaii.  So good and with Ala Madre Low Carb Tortillas of course!

BEAN AND GUACAMOLE TOSTADA

DINNER AT HOME

I love Bean Burritos and this homemade version is super filling and delicious.  I could eat one of these or a Taco every day of the week.  We use A La Madre Low Carb Tortillas which taste just as good as regular high carb Tortillas.  Layers of flavor with Spicy Refried Beans, Guacamole, Lettuce, Cheese, Pico de Gallo, Hot Sauce and Cotija Cheese.

These Beef, Bean and Avocado Tostadas were some of the best I have ever eaten in my life. Yes that good.  Low carb too with A La Madre low carb Corn Tortillas.  So good we ate these two nights in a row.

Damn...this was good.  Used Rotisserie Chicken that I shredded and mixed with sautéed onions, jalapeños and a can of Mexican Style Tomatoes.  Let it simmer for an hour and crush up the tomatoes really good.  In another saucepan I sautéed lots of onions and jalapeños and then added a can of Spicy Refried Beans.  Mixed and simmered until the beans were warm and creamy.  Layered the beans first, then the chicken, hot sauce, lettuce, cheese Pico de Gallo and topped with Avocado.  Probably one of my favorite Tostadas ever.  Use the pre-cooked Tostadas so you don't have to use oil and fry.

Love these homemade Tostadas with Spicy Refried Beans, Rotisserie Chicken, Lettuce, Cheese and Fresh Pico de Gallo with Jalapeño and Cilantro.  So easy to prepare and so delicious.

I love Tostadas and there is no better place to eat them then at home.  I start with a fried corn tortilla than place a layer of refried beans and then a topping of Carne Asada.  Sometimes I go just plain bean and sometimes we use shredded or cubed chicken.  A little hot sauce, lettuce, cheese and Pico de Gallo.  I like to use the Spicy Jalapeño Rosarita Refried Beans and then add a little extra sautéed onion and jalapeño.  If you do not want to pull out oil and fry up the corn tortillas, I highly recommend using Guerrero Tostadas.  These are pre made tortillas that you just warm in the oven for around ten minutes.  Great tasting and crispy tortillas without frying them at home.

CHICKEN TOSTADAS AT HOME

Bought another one of those whole Rotisserie Chickens at Costco for $6.  Used part of the chicken breast to make some really good Chicken Tostadas.  Heated a can of Vegetarian Refried Beans that were kicked up with some sauteed onion, jalapeno and cilantro.  Made some fresh salsa with tomato, onion, cilantro and lime juice.  Assembled the tostada by pan frying a corn tortilla in a small amount of vegetable oil.  Once the tortilla was crispy we patted it dry and topped it with the beans, a layer of taco sauce, chicken, lettuce and the salsa.  Quick, inexpensive, delicious and very filling.
