RIBEYE ON THE LANAI

DINNER AT HOME

I love a perfectly seasoned and cooked steak at home.  My Wife is an expert at cooking steaks so she always gets the call to cook when we have steak.  Served this Ribeye with Twice Baked Potatoes with Cheddar and Parmesan Cheese, Sour Cream and Butter.  Yum!

STEAK AND CRAB - DINNER AT HOME WITH FAMILY

STEAK AND CRAB
DINNER AT HOME

Enjoyed one of the best meals ever at home with family members we will not see for Thanksgiving.  Wanted to give them a special dinner that they would remember.  Wow....this was awesome.  We started with some nice Smoked Gouda and Mozzarella wrapped in Prosciutto and Basil.  Next came some really good Gyoza (Pot Stickers) that we picked up at Costco.  The main course was simply amazing.  A perfectly seasoned an cooked Rib Eye Steak with large Alaskan King Crab that was meaty, sweet and delicious.  The Twice Baked Potato was the best I have ever had.  The potato mixture included bacon, prosciutto and cheese.  The potato skin was cooked until crunchy.  Topped with a dab of sour creme and green onion.  Side dish of Broccoli with Hollandaise Sauce was also excellent.  Ended the meal with a Chocolate Mouse Cheesecake from the Cheesecake Factory.  This is one of those special meals enjoyed with family that cannot be duplicated in a restaurant.  So blessed to savor this evening with family.

HOLIDAY DINNER AT HOME WITH FRIENDS

HOLIDAY DINNER
AT HOME WITH FRIENDS

Enjoyed a wonderful dinner and evening with friends.  My friend knows a wine distributor and he came supplied with a bottle of 2002 Opus One and a 1999 Dom Perignon.  Dinner began with Seared Ahi Tuna, Assorted Cheese, Salami and a Shrimp Civiche served in champagne glasses.  Dinner began with a Caesar Salad with Anchovies and Parmesan Crisps.  We followed the salad with a light pasta with butter, sage, Parmesan and local mushrooms.  The main course included Alaskan King Crab Legs, Filet Mignon, Twice Baked Potatoes stuffed with roasted garlic, butter, ham and cheese.  Also had some Asparagus and a tomato wedge crusted with Parmesan and bread crumbs.  Our friends brought great and tasty creme puffs for desert, but I was so full that I could not even look at them.  We lit the fireplace, kicked back with a glass of wine and enjoyed our beautiful Christmas Tree.  Truly a wonderful evening.

HOLIDAY DINNER

HOLIDAY DINNER
AT HOME

We love hosting friends for dinner during the Holidays.  Shirley always goes the extra mile and knocks out great food and presentations.  I am so lucky she puts up with me during these events.  We hosted good friends and served four types of fresh Island Poke.  For dinner, we enjoyed a Prime Rib of Beef crusted in garlic and horseradish and huge Alaskan King Crab legs that were sweet and delicious.  Sides included twice baked potatoes with cheese, bacon and chives, asparagus with hollandaise sauce and a terrific caesar salad with anchovies, avocado and tomato.  Our friends brought a Ice Cream Cake and chocolate stuffed creme puffs for dessert.  Both were awesome.  This meal made me realize; 1.  how blessed we are and 2. how fat I am getting.  Starting back on the diet effective January 1.
