HAWAII VS BOISE STATE FOOTBALL AT ALOHA STADIUM

ALOHA STADIUM, HONOLULU, HAWAII

Hawaii was humiliated by Boise State in a 49-14 loss that found what is left of Hawaii's fair weather fans leaving for the parking lot in the third quarter.  What a sad display of support for Hawaii football.  The parking lot and stadium were half empty for what should have been one of the biggest games of the season.  There was no crowd and no spirit.  The Boise fans were louder than the Hawaii fans who seemed to mostly just come for the cold beer.  This game was a disgrace on the field and in the stands.
Hawaii is having an awful loosing season under new head Coach Norm Chow.  With only one victory all year, the Warrior fans seem to have given up on even showing up.

CHICKEN, SHRIMP AND SAUSAGE SKEWERS

 CHICKEN, SHRIMP AND SAUSAGE SKEWERS
DINNER AT HOME

Wanted to cook up a meal using only what we had in the refrigerator.  I found some chicken thighs and shrimp in the freezer so I thawed them and then marinated them in garlic, shallots, lemon rind and Robusto Italian Salad Dressing.  Skewered the chicken and shrimp with some red onion and sausage and then grilled on the bbq.  Served with leftover mashed potatoes.  These simple little skewers were actually really good.  Need to keep the chicken pieces thin so they cook through.  The key here is getting the chicken fully cooked while not overcooking the shrimp.

Enjoyed  a few ounces of beef along with some mashed potatoes and little wheels of zucchini stuffed with creme cheese, goat cheese and some fresh basil.  Crusted the steak with salt, pepper, onion powder and a bit of brown sugar.  Seared on a hot grill pan and then placed in the oven to finish cooking to a perfect medium rare.

BAKED SALMON WITH JAPANESE MUSHROOMS
DINNER AT HOME

Need to get back to a more healthy diet as I have packed on some extra poundage during my quest to blog about some pretty darn good food adventures.  This Baked Salmon dish delivered big flavor while keeping the fat and calories to a minimum.  We simply placed the salmon in foil and added soy sauce, white wine, sesame oil, sliced ginger and a bit of green onion.  Baked for around 20 minutes at 350 degrees.  Served with white rice and fresh cilantro.

Enjoyed a great dinner at the Hulopo'e Court Steakhouse.  The view was wonderful and the service was superior.  I waiter named Tim was a true professional and went above and beyond the call of duty to make this one special evening.  Cannot say enough good about the service and especially Tim.  During our meal sirens blasted around the Island to warn us that Hawaii was under a tsunami warning.  Our wait staff was cool about this and did not rush us to finish.  Instead we hoisted a glass of champagne and enjoyed the great weather.

The Challenge at Manele was designed by Jack Nicklaus.  The dramatic natural coastline terrain with magnificent ocean views make this one of the most beautiful courses in Hawaii.  The course was tougher than The Experience at Koele and totally different.
