GRILLED MAHI MAHI

DINNER AT HOME

Whole Foods had Mahi Mahi on sale so I purchased some along with fresh vegetables.  Did it all online and they delivered the food to my door for free in hours.  Never even went inside a store.  This is a game changer for me.  Ordering food online and getting home to find it on my doorstep in insulated bags.  Amazon baby!!!! my favorite store and stock....  Simply seasoned the Mahi and then placed it on the BBQ for around 10 minutes.  Made a Mushroom Cream Sauce that was definitely restaurant quality and it elevated this dish to great.  
Absolutely loved the Fish, Sauce and Veggies.

Enjoyed Beef Tacos again thanks to Mr. Tortilla 1 Net Carb Tortillas.  So glad we found these Tortillas so I can enjoy my Tacos.  These were oh so good and totally satisfied my Taco cravings!

GRILLED ONO WITH MUSHROOM CREAM SAUCE

DINNER AT HOME

Fresh Ono was on sale so I was able to feed the family for under $10 total.  I made a delicious sauce using Sautéed Mushrooms in White Wine, Garlic and Shallots with a bit of Cream and Truffle Butter.  This was delicious and the sauce also elevated the flavor of the vegetables.

What can I say about Hy's Steak House.  This place is an institution and always delivers on ambiance, service and great food.  Definitely a place to try when wanting a good steak in Waikiki.  I love the fact that this place takes you into another world that could be New York, San Francisco or Atlanta.  The dark wood,  old school bar and upscale atmosphere definitely is different for Waikiki.  What I like is that you can dress up here or come as you are.  Just be comfortable and you will enjoy your dinner here.  The restaurant has a different feel with COVID.  There are temperature checks and the tables are spaced apart for social distancing.  I actually like this because you don't have people right next to you that can listen to your conversation and vice versa.  I hate being so close to another table that you literally are part of their dinner.  I began the evening with a delightful glass of Frank Cabernet.  Smooth and delicious.  Next up was a Caesar Salad that they prepare table side.  It is a nice show but the salad itself steals the show.  Probably the best Caesar Salad in Hawaii if you ask me.  Loved it.  I enjoyed a Filet Mignon with Vegetables.  The steak was cooked to perfection and delicious but lacked any seasoning.  A little salt and pepper would have been nice.  I am eating low carb so I passed on a starch.  For dessert I requested Berries and Mascarpone which is not on the menu.  The waiter said he would check to see if they could do it and they did.  I am telling you this dessert was perfect and delicious.  For me this was a perfect steak dinner.  Nice salad, small steak and light dessert.  Oh yeah and a couple glasses of vino!

How nice was it to get out to Waikiki with the family and enjoy an afternoon lunch at The Royal Hawaiian Hotel.  We arrived to find the perfect table right up against the sand with an unobstructed view of the beach and Diamond Head.  There is probably no more iconic spot in Waikiki than The Royal Hawaiian.  In my younger days we ruled the beach in front of this hotel.  We stashed cases of beer in bags of ice and buried them in the sand.  Often we would bring a battery operated blender and make drinks for female visitors.  We would throw footballs, play frisbee and enjoy the water while catching a buzz and making new friends every day.  This was the life and I was lucky to enjoy for so long.  Fast forward to today and I am enjoying lunch overlooking the beach with my Wife of 23 years and 19 year old Daughter.  Sounds crazy but I am just as content now if not more than the wild days of my drunkin abandon.  While memories flooded my mind of the wild days spent on the beach, my attention turned to my family and I felt a bit of calm and just thanked to Lord for this day with them.  Enjoying Waikiki like a tourist was nice and being with my girls was even nicer.  I ordered a glass of champagne just because it felt like I needed a drink as this is all we did in Waikiki.  I took a sip or two and left 3/4 of the glass on the table.  Holy shit am I getting old or what.  We ordered the Poke as an appetizer.  It was fresh and so delicious.  My Daughter and I enjoyed the Cobb Salad.  This was a great salad with lots of Bacon, Avocado, Chicken and Roasted Corn.  The Bleu Cheese Crumbles and Dressing were delicious.  My Wife had the fresh Mahi Mahi and it was fantastic.  Super fresh.  Some how Truffle Fries ended up on the table for my Daughter.  She got to enjoy them all to herself since me and the Wife are going low carb.  Well I did taste one and my Wife had a few.  These fries are delicious.  I could have sat here for hours with my girls.  The service was excellent, the sky was overcast so it was comfortable and the view was pure Waikiki.

Kind of crazy but after living in Hawaii for over 30 years, we do not have a favorite Chinese restaurant or even one to recommend.  Cannot think of one Chinese restaurant that we have eaten at here that I would want to go back to again.  Thought I would try House of Wong on Kapahulu because they had some decent reviews.  Ordered the Beef Wraps, Clams in Black Bean Sauce, Sweet and Sour Pork, Mongolian Beef and Shrimp with Vegetables.  To my surprise everything was good.  Vegetables were fresh and not overcooked which I really liked.  Would definitely order from House of Wong again!

CAULIFLOWER FRIED RICE - STEP BY STEP RECIPE

BREAKFAST AT HOME

My Wife enjoyed the last batch of Cauliflower Fried Rice that I made and asked that I make more for the coming week.  Happy Wife..Happy Life so I did as requested.  This batch came out amazing and tasted as good as regular Fried Rice.  Recipe is simple and just takes some prep time to chop all of the ingredients. I use butter to saute the vegetables and add more to fry the rice.  Think about going to your favorite Teppanyaki restaurant where they cook at your table.  They always cook the rice in butter.  Lots of butter.  The only thing I leave out in this recipe is Oyster Sauce which you can always add in if you are not going low carb.  The Oyster Sauce really adds flavor and is a must in my regular Fried Rice.  You can use any meats that you have on hand but a real Hawaii Fried Rice needs Portuguese Sausage, Spam and Char Sui.  I often use Chorizo, Steak, Prime Rib, Kalbi, Chicken, Bacon or any other meats in the refrigerator.  This is really good Fried Rice without the carbs!

LOW CARB SUBSTITUTE FOR RICE

CHAR SUI, SPAM, PORTUGUESE SAUSAGE, ONION, CARROTS, PEAS

SCRAMBLE 2-3 EGGS AND SET ASIDE

SAUTE ONION, CARROTS AND GARLIC IN BUTTER

SALT AND PEPPER TO TASTE AND SET ASIDE

COOK ALL OF THE MEATS

ADD THE VEGGIES AND EGG BACK WITH THE MEATS

MOVE EVERYTHING ASIDE AND ADD BUTTER

ADD RICED CAULIFLOWER AND WARM THROUGH

MIX IT ALL UP.   ADD SOY SAUCE AND OYSTER SAUCE  TO TASTE

ADD PEAS AND MIX

TOP WITH GREEN ONION
