GRILLED OPAH AND ASPARAGUS

DINNER AT HOME

The fresh fish selection at the market on this day was not too good.  Best looking fish was Opah which is great for grilling because it is very meaty.  Served with a Sweet Potato Puree and grilled Asparagus.
Also made a White Wine Butter and Caper Sauce.  When grilling Opah you really need some kind of sauce to compliment the flavor of the fish.  The fish is thick and a bit oily but delicious when grilled properly and served with a nice sauce.

This fresh Opah was incredible.  Light, moist and full of flavor.  Served with a Papaya Salsa with Balsamic reduction and sautéed vegetables.  Better than 99.9% of Hawaii restaurants and a dinner that we absolutely loved!

Wow....this was delicious.  So blessed to live in Hawaii where we have an abundance of fresh fish.
This Opah was amazing.  Grilled and served with a sauce made with garlic, shallots, white wine, chicken stock, capers, lemon juice and butter.  Better than any restaurant in Hawaii!

GRILLED OPAH

So lucky to live in Hawaii where fresh fish is abundant.  When I saw this bright pink Opah at the market, I knew immediately what we were having for dinner that night.  Grilled the Opah with just a sprinkle of Salt, Pepper and Garlic Powder.  Made a sauce using Garlic, Shallots, White Wine, Lemon Juice, Cream and Butter.  Served over bed of sautéed Onions and Peppers.  So simple yet so delicious.  The Opah was incredible.  Meaty yet soft and moist.  Yummy!

GRILLED OPAH DINNER

Saw this super fresh Opah at the market and just had to buy it.  This fish was so fresh and tasted delicious.  Served on a bed of Sautéed Hamakua Mushrooms with White Wine, Garlic, Shallots, Cream and Butter Sauce.  Sooo good!

When I saw super fresh Opah (Moonfish) at the supermarket for about $8 per pound I had to grab a few pieces for dinner.  The bright red flesh looked like sashimi grade quality and I knew this had to be good.  We walked over to the produce department and I saw that mushrooms were on sale so I grabbed a bag.  Came up with a sauce that I used previously with Opah and it was delicious.  So delicious that after about two bites of this dinner my Daughter said that this "is now her favorite dish".  I would have to agree, the flavor of the fish and sauce were perfect together and this was a restaurant quality meal at a fraction of the price.  Opah or Moonfish is a firm white fish with a mild flavor.  If you can come up with a nice sauce this is a fish that the entire family will enjoy.

SAUTE GARLIC AND SHALLOTS IN OLIVE OIL AND TABLESPOON OF BUTTER.  ADD MUSHROOMS
AND COOK A BIT.  ADD WHITE WINE AND REDUCE.  ADD CREAM AND A LITTLE MORE BUTTER AND SOME SALT AND PEPPER.

GRILLED OPAH WITH PAPAYA SALSA

GRILLED OPAH (MOONFISH) WITH PAPAYA SALSA
DINNER AT HOME

Whipped this delicious dish up in only minutes after finding super fresh Opah (Moonfish) at
Foodland Farms.  At $7.99 per pound it was a bargain compared to Mahi Mahi which was $17 per pound.  This Opah was so fresh and went perfectly with a quick Papaya Salsa made with Red Onion, local Kamuela Tomatoes, Papaya and Cilantro.  I added salt, pepper and a few dashes of Balsamic Vinegar to the Salsa and placed it on top of the fish.  DELICIOUS!!!!!

Blessed to live in Hawaii and enjoy the abundance of fresh fish from our warm waters.  Opah or Moonfish is popular in Hawaii restaurants and in fact was the featured fish at D.K. Steakhouse last night where we had dinner.  I cooked up this Opah at home and enjoyed it with some Garlic Mashed Potatoes and sautéed fresh vegetables.  Opah is a firm and meaty fish that you do not want to overcook.  The fish is mild in flavor so a butter or creme sauce is recommended.  I used the sauce from the vegetables and this dish was tasty.

A LITTLE HAWAIIAN SALT PLUS PEPPER
SHALLOTS, GARLIC AND FRESHLY CHOPPED JALAPENO SAUTEED IN BUTTER AND OLIVE OIL
DO NOT OVERCOOK OPAH - IT WILL GET TOUGH AND CHEWY
ADDED TO GARLIC AND SHALLOTS - ONION, RED AND GREEN BELL PEPPER, CARROTS AND PEAS.

Always like to check out Foodland's fresh fish selections.  They usually have some of the best fresh fish in Honolulu.  On this day, they had some great looking Opah for $9.99 per pound.  I bought three pieces for $12.30 total.  Hawaiian Opah has a bright red and orange color.  It is high in fat content and very meaty.  The natural sweet flavor maintains a firm texture through cooking.  I made a sauce using shallots, garlic, white wine, chicken stock, butter, cream and salt and pepper.  The sauce really added flavor to the the fish, potatoes and vegetables.  Tasted great with everything on the plate.  The sauce is simple.  Heat up a tablespoon of olive oil and then place chopped shallots and garlic in the oil.  Cook until shallots are translucent.  Deglaze with white wine and reduce.  Add chicken stock and reduce again.  Add three tablespoons of butter and some cream.  Salt and pepper to taste.  I cooked the Opah on an Indoor Grill Pan for about three minutes on each side.  Finished cooking in a 350 degree oven for just six minutes.  Be careful not to overcook the Opah as it will get tough.  You want a nice pink in the middle when serving.  This was a really delicious dinner for three for well under $20.

FRESH HAWAII OPAH
SALT AND PEPPER FISH AND COOK FOR AROUND 2-3 MINUTES ON BOTH SIDES.
FINISH IN THE OVEN FOR ABOUT 6 MINUTES ON 350 DEGREES.
SERVED WITH SHALLOT, GARLIC, BUTTER AND CREAM SAUCE
