GRILLED MARLIN WITH CHERRY, SUN DRIED TOMATO AND GARLIC SAUCE

GRILLED MARLIN WITH CHERRY, SUN DRIED TOMATO AND GARLIC SAUCE
DINNER AT HOME

Fresh Marlin was on sale for $6.99 per pound so I grabbed a pound and made this delicious restaurant quality meal for under $15 for three.  Marlin is a meaty and firm fish that really needs a sauce.  I sautéed lots of Garlic and Shallots then added Sun Dried Tomato Paste and Sun Dried Tomatoes.  Stirred it all for about a minute and then added Cherry Tomatoes that I had cut in half.  I let the Cherry Tomatoes cook for a few minutes then added white wine.  Reduced and then added a little lemon juice and butter.  Salt and Pepper to taste.  Simple and delicious!

GRILLED MARLIN WITH GARLIC GINGER CREAM SAUCE

GRILLED MARLIN WITH GARLIC GINGER CREAM SAUCE
DINNER AT HOME

I used the same piece of Marlin that we picked up for $3.49 per pound and made Fish Tostadas out of to make dinner the next night.  Had enough Marlin left to make two Grilled Filets.  Served with a Garlic Ginger Cream Sauce with Bok Choy and Carrots sautéed in Garlic and Ginger.  So good!

GRILLED MARLIN - DINNER AT HOME

GRILLED MARLIN
DINNER AT HOME

Love it when I visit the market and find fresh fish that looks delicous even in the cooler.  This week I found a nice chunk of Marlin that was perfectly pink and thick.  One piece was enough to feed the entire family.  I grilled the Marlin on an indoor grill pan and then finished it in a 350 degree oven for around 10 minutes.  The fish was cooked to perfection leaving just a hint of pink in the middle.  The one thing you do  not want to do with Marlin is overcook it.  It is a firm and meaty fish and can become dry if you cook it too long.  Marlin has a mild flavor and it is always good to serve it with a sauce.  I sautéed shallots and garlic in a little bit of olive oil and butter.  Deglazed with white wine and then added some chicken stock.  Reduced and finished with a little more butter, lemon juice, capers and pepper.  No need to add salt as the capers take care of that.  Served up with some Garlic Mashed Potatoes because I ruined the rice that I was going to serve with this dish.
