SMOKED MARLIN SANDWICH

LUNCH AT HOME

I first enjoyed a Smoked Marlin Sandwich at a pool bar in Bali.  Now when I can get Smoked Marlin in Hawaii, this is my go to sandwich.  Butter and toast a Brioche Bun and then coat both sides with Horseradish.  Add a nice layer of Red Onion and then pile on the Smoked Marlin and top with Capers.  Absolutely delicious!

FRESH MARLIN WITH WHITE WINE, BUTTER AND CAPER SAUCE

Picked up some beautiful and delicious fresh Marlin for $4.99 per pound.  Simply grilled it and served with a White Wine, Butter and Caper Sauce that was the bomb.  This restaurant quality dinner is not only great tasting but also very inexpensive and healthy.  Entire family loves this.  For the sauce, saute some shallots and garlic in olive oil.  Add White Wine and reduce.  Add Chicken Stock and reduce.  Add Cream and then butter and capers.  Capers provide the salt but you can add to taste.

Cooked up this delicious and restaurant quality Grilled Marlin dinner in minutes.  Made sauce using white wine, shallots, garlic, ginger, cream and butter.  Had some potatoes in the pantry so I made homemade mashed potatoes with a little butter and cream cheese.  This dinner was oh so good!

I used the same piece of Marlin that we picked up for $3.49 per pound and made Fish Tostadas out of to make dinner the next night.  Had enough Marlin left to make two Grilled Filets.  Served with a Garlic Ginger Cream Sauce with Bok Choy and Carrots sautéed in Garlic and Ginger.  So good!

Cooked up some incredibly fresh Kajiki (Blue Marlin) with a sauce using local Mushrooms, Shallots, Garlic, White Wine and Cream.  This fish was delicious.  Perfection!

After eating out on vacation for two weeks it was nice to get home to Hawaii and cook up some of our Island favorites.  Fresh Ahi looked amazing so I bought an small block and made homemade Poke.  So delicious that this was really a meal until itself.   Fresh Marlin was the most inexpensive and abundant fish at the market so I grabbed some and grilled it.  Topped with an Avocado and Papaya Relish with a little Balsamic Vinegar.  This dinner was easy to prepare, fresh and so delicious.
Got a huge hug and kiss from my Daughter when she finished eating.

SMOKED MARLIN SANDWICH

SMOKED MARLIN SANDWICH

My good friend brought some Smoked Marlin back from his trip to Kona.  This is a real treat and one of my favorite snack foods.  While I was in Bali, Indonesia several years ago, we stayed at a hotel on the beach.  Each day we would visit the pool bar where they served Smoked Marlin Sandwiches.  Once we had one we were addicted and probably ate one every day during our visit.  With the Marlin in hand from Kona I made my version of my Bali favorite.  First I put a butter/garlic spread on the bun and seared it on the grill.  Then you thinly slice the smoked marlin and lay it on the bread.  Top the the marlin and add sliced red onion, capers and horseradish.  This sandwich is the BOMB.  You can also serve this dish without the bun.  Try this if you can get smoked marlin.  I guarantee you will love it.  TASTE OF HAWAII FAVORITE!
