GRILLED MONCHONG WITH GARLIC CREAM SAUCE
DINNER AT HOME
I was so happy to see super fresh Monchong for $5.99 per pound. This is an incredible price for fresh fish in Hawaii and it allowed me to prepare dinner for three for under $10 total! While I have already published two posts on Monchong (see links below), this meal was so good that I wanted to share it.
Since Monchong is a mild fish, you really need a sauce to enhance the flavor. I simply sautéd garlic and shallots in olive oil and then deglazed the pan with 1/4 cup of white wine. I let the wine reduce and then added 1/4 cup of chicken stock. Reduced again and added about 1/3 cup of cream. I let the cream heat through and then added juice of half a lemon some capers and fresh thyme. Finished the sauce with three tablespoons of butter, salt and pepper. My measurements are not exact as I just add, taste and adjust. While my sauce thickened on a very low heat, I grilled the Monchong on an indoor grill pan. This dish was a hit with the entire family and delicious. Liked the sauce so much that I poured it over the broccoli and carrots. Served with mashed potatoes with butter and fresh thyme.
