GRILLED MONCHONG WITH GARLIC CREAM SAUCE
DINNER AT HOME 

I was so happy to see super fresh Monchong for $5.99 per pound.  This is an incredible price for fresh fish in Hawaii and it allowed me to prepare dinner for three for under $10 total!  While I have already published two posts on Monchong (see links below), this meal was so good that I wanted to share it. 
Since Monchong is a mild fish, you really need a sauce to enhance the flavor.  I simply sautéd garlic and shallots in olive oil and then deglazed the pan with 1/4 cup of white wine. I let the wine reduce and then added 1/4 cup of chicken stock.  Reduced again and added about 1/3 cup of cream.  I let the cream heat through and then added juice of half a lemon some capers and fresh thyme.  Finished the sauce with three tablespoons of butter, salt and pepper.  My measurements are not exact as I just add, taste and adjust.  While my sauce thickened on a very low heat, I grilled the Monchong on an indoor grill pan.  This dish was a hit with the entire family and delicious.  Liked the sauce so much that I poured it over the broccoli and carrots.  Served with mashed potatoes with butter and fresh thyme.

GRILLED MONCHONG

So lucky to live in Hawaii.  The weather is great and there is an abundance of fresh fish.  The market today was really good with fresh Mahi Mahi, Opah, Sword Fish and Monchong.  I went for the Monchong because I like the texture and flavor plus it was $9.99 per pound as opposed to almost $20 per pound for Mahi Mahi.  I cooked this great fresh and healthy meal for three for around $20 total.  Monchong is great for grilling.  The fish is very mild so it works well with just about any sauce.  I made a simple sauce with shallots, chicken stock, white wine, butter and a hint of creme.  Added the creme because we had some in the refrigerator and it was expiring in a day or two.  Simply sauteed the shallots and added chicken stock.  Reduced a bit and added white wine.  Reduced again and added salt/pepper then mixed in about a tablespoon of cream.  Sauce was delicious according to my wife and daughter.  Grilled the Monchong for a few minutes on both sides and that was it.  Served with fresh vegetables sauteed in a little garlic, olive oil and butter.  The entire family finished everything on our plates so this was a winner.
