DINNER AT HOME

This simple and delicious fresh fish dinner was under $10 total for our family of three.  The super fresh Monchong has a mild flavor and needs a sauce.  I used some Lomi Salmon that we had in the refrigerator.  Usually make a white wine and butter sauce but my Wife and Daughter love Lomi Salmon and I wanted to use up what we had in the fridge.  Delicious!

Found Monchong on sale again for $5.99 per pound and decided to cook it up with a spicy Black Bean, Corn and Green Salsa Relish.  This was so delicious and the entire dinner for three was around $15 total.

Monchong was on sale at the lowest price I have ever seen.  Under $5 per pound.  Dinner for three on this night was under $14 for everything.  Not bad for a restaurant quality meal that tasted fantastic.  
Served with sautéed fresh vegetables and a little Jasmine Rice.  This was soooooo good!

GRILLED MONCHONG WITH MUSTARD CREAM SAUCE

GRILLED MONCHONG WITH MUSTARD CREAM SAUCE

Found three nice and fresh pieces of Monchong at the market for less than $8 total.  Made a very fast Mustard Cream Sauce by sautéing shallots and garlic in a little bit of butter.  Deglazed with White Wine and about 1/4 cup of Chicken Stock.  Added four tablespoons of butter and then about one tablespoon of Dijon Mustard.  Stirred well on low heat and then added about 1/4 cup of Cream.  Sauce was delicious and perfect with the Monchong fish.  Served with Baked Brussels Sprouts with Bacon, Balsamic Vinegar and Honey glaze along with some Jasmine Rice.  Monchong is inexpensive and you can really kick up the taste with a good sauce.  Cooking the Monchong was simple.  I grilled it on an indoor grill pan and then finished in the oven for 10 minutes at 350 degrees.  Had this meal on the table in less than an hour including prep and cooking time.

GRILLED MONCHONG

So lucky to live in Hawaii.  The weather is great and there is an abundance of fresh fish.  The market today was really good with fresh Mahi Mahi, Opah, Sword Fish and Monchong.  I went for the Monchong because I like the texture and flavor plus it was $9.99 per pound as opposed to almost $20 per pound for Mahi Mahi.  I cooked this great fresh and healthy meal for three for around $20 total.  Monchong is great for grilling.  The fish is very mild so it works well with just about any sauce.  I made a simple sauce with shallots, chicken stock, white wine, butter and a hint of creme.  Added the creme because we had some in the refrigerator and it was expiring in a day or two.  Simply sauteed the shallots and added chicken stock.  Reduced a bit and added white wine.  Reduced again and added salt/pepper then mixed in about a tablespoon of cream.  Sauce was delicious according to my wife and daughter.  Grilled the Monchong for a few minutes on both sides and that was it.  Served with fresh vegetables sauteed in a little garlic, olive oil and butter.  The entire family finished everything on our plates so this was a winner.

COOKED MONCHONG FOR A FEW MINUTES ON EACH SIDE
GRILLED MONCHONG WITH FRESH VEGETABLES
SIMPLE, FRESH AND DELICIOUS DINNER
