GRILLED SHRIMP STACK WITH CAVIAR

DINNER AT HOME

Going back and forth with my Daughter on what to have for dinner.  She wanted Sushi or Thai which meant going out or ordering for delivery.  I looked into the refrigerator and saw a combination of food that I could use.  Shrimp, Avocado, Tomato, Pickled Carrots and Daikon plus Caviar that we must use up before it spoils.  Came up with this delicious stack that really blew me away.  Delicious!  The bottom layer is Pickled Carrots and Daikon.  Then I added a layer of Avocado and then fresh Pico de Gallo (Tomato, Onion, Cilantro and Lime Juice).  Topped with Grilled Shrimp and Caviar.  Also added a little Sriracha Mayo.

HAPPY HOUR PUPU'S AT HOME

Started by buying a nice block of Ahi for Sashimi and then saw fresh Clams on sale.  Next to the Clams were some Shrimp so I decided to do a little Pupu style dinner at home.  Added Buffalo Chicken Tenders for some more protein and a kick.  This was a delicious meal that reminded me of having Pupus at the Country Club or nice restaurant in Waikiki before COVID.  So nice to enjoy dinner on the lanai wearing shorts, no shirt in 80 degree weather in January.  Moving to Hawaii has to be one of my wisest decisions ever.  Truly blessed.

Got to get back to more healthy eating because I have packed on some of the pounds that I worked so hard losing.  Starts now with this Shrimp and Avocado Salad.
