FRESH GRILLED ONO

DINNER AT HOME

Happy to find super fresh Ono for a really low price at Foodland Farms.  This fish was so moist and meaty.  Delicious!  Served with a Papaya Salsa and Guacamole Tower along with a White Wine Cream Sauce.  Definitely a restaurant quality meal at home.

I nailed the sauce for this fresh Ono but overcooked the fish.  You don't want to overcook Ono as it becomes really firm fast.

GRILLED ONO

DINNER AT HOME

Ono is a meaty white fish that has a delicate flavor.  Great for grilling or baking.  Secret is not to overcook the fish so it stays moist.  I paired this super fresh Ono with a sauce made with Garlic, Shallots, White Wine, Chicken Stock, Butter, Salt, Pepper and some Truffle Butter.
Topped with Fried Shallots which are delicious.

Good Friday means no meat eating for the day in this family so I made Grilled Ono Sandwiches for lunch.  Grilled the buns, made homemade Tarter Sauce (Mayonnaise/Sweet Pickle Relish) and layered fresh vegetables like making a burger.  This was the perfect Fish Sandwich and better than most all restaurants where I have eaten Fish Sandwiches.  Really that good!

Fresh Hawaii Ono was on sale so I picked some up and cooked this delicious meal.  Made a quick sauce using White Wine, Chicken Stock, Cream, Garlic and Butter.  Restaurant quality meal!

GRILLED ONO WITH GARLIC CREAM SAUCE

Enjoyed an incredible piece of fresh Hawaii Ono for dinner.  Ono is a Hawaiian word meaning "good to eat" and the fish is commonly known as Wahoo which is a close relative of the King Mackerel.  Ono is meaty and has a very light flavor.  You really need a good sauce to kick up the taste of Ono.  I made a Garlic Cream Sauce using shallots, garlic, butter, white wine, cream, salt and pepper.  Sauce is easy.  Melt tablespoon of butter in pan and then add garlic and shallots.  Cook and then deglaze with white wine.  Reduce the wine and add 1/4 cup of cream, more butter to taste and salt/pepper.  The sauce was amazing and really worked well with the fish and mashed potatoes.  Cooked the Ono on an indoor grill pan until both sides were seared.  Finished in a 350 degree oven for around ten minutes.  This was an exceptionally good meal that would have cost $25-$30 per plate in a Hawaii restaurant.  I pulled it off for around $15 total for three.
