SMOKED MARLIN SANDWICH

LUNCH AT HOME

I first enjoyed a Smoked Marlin Sandwich at a pool bar in Bali.  Now when I can get Smoked Marlin in Hawaii, this is my go to sandwich.  Butter and toast a Brioche Bun and then coat both sides with Horseradish.  Add a nice layer of Red Onion and then pile on the Smoked Marlin and top with Capers.  Absolutely delicious!

Grabbed a quick lunch at Huggo's on the Rocks on the way out of Kona.  Glad I did because this Fish Sandwich was amazing.  Super fresh fish with an Unagi Glaze and Kim Che Slaw.

Absolutely delicious!

Good Friday means no meat eating for the day in this family so I made Grilled Ono Sandwiches for lunch.  Grilled the buns, made homemade Tarter Sauce (Mayonnaise/Sweet Pickle Relish) and layered fresh vegetables like making a burger.  This was the perfect Fish Sandwich and better than most all restaurants where I have eaten Fish Sandwiches.  Really that good!

Enjoying some more delicious fresh Marlin.  This time I made little Sliders with grilled Marlin, Homemade Tarter Sauce, Lettuce, Onion, Tomato and Avocado.  These little babies are so damn good that if you tried one you would want to kiss the chef (me)!

There is a glut of fish on the market in Hawaii.  With restaurants and hotels closed due to COVID-19, fish prices have dropped dramatically and the markets are filled with a great selection.  I bought some super fresh Monchong and made one of the best Fish Sandwiches I have ever tasted.  Grilled the fish and served it on a toasted bun with lettuce, tomatoes, onion and a homemade tarter sauce.

LUNCH AT THE OFFICE

The beginning of Lent means no meat eating on Fridays until Easter.  Enjoyed a McDonald's Filet-O-Fish for lunch at the office.  I ordered with Lettuce, Tomato and Onion and they did it.  Really made this a better Fish Sandwich.  Did not know that I was getting a double but that is what they brought me.  Filled me out though.
