Loved my Birthday dinner at Hoku's at the Kahala Hotel and Resort.  Best part was that my Daughter was able to join us at the end of the meal after she got off work.  She arrived wearing her little white shirt and tie uniform from Tanaka of Tokyo.  So cute.  She was happy because she made it for the steak portion of dinner and dessert.  We had a great corner table overlooking the beach and ocean.  Our waitress was local, friendly and happy.  She made us feel welcome and was the best wine pourer ever.  She always made sure I had liquid in my glass.  We ordered the Grand Tasting Menu which at $200 per person is a bit expensive.    The wine pairing is another $80.  You only live once and I'm paying for it my Wife said.  Happy Birthday.  The dinner and wine did not disappoint.  The courses were served in good time and never rushed.  I really felt like we were the only two people in the restaurant as everything around us seemed to disappear in a world of delicious food and some damn good wine.  Everything tasted great with the Potato Agnolotti, Butter Poached Lobster and Mac Nut Crusted Mahi Mahi being my favorites.  I loved everything about this evening especially my Wife, Daughter and the food.  Would I spend $200 to do this again.  Hell yes!

A brunch buffet with no lines and no leaving your table?  Hoku's at the Kahala has done.  They bring the buffet to you!  That's right, you get the entire buffet menu brought to your table and believe me everything is delicious and quality.  I always prefer quality and great flavors versus quantity.  This Brunch brings it all.  Loved it but at ($84) plus tip and drinks, its not something we will do every weekend.  But for that special occasion (like my b'day) it is definitely a treat and worth it.

This could be one of the best lunch locations on all of Oahu.  The Seaside Grill sits just steps from a quiet and serene white sand beach lined with palm trees.  The stunning views to the left and right takes you to another Island far away from the hustle and bustle of Waikiki.  This is truly paradise and a place that I totally love.  A Casear Salad with fresh Mahi Mahi will set you back around $22 here and Fish Tacos or a Burger are around $15 to $20.  Not cheap but the location is prime and the tables on the sand cannot be beat for a relaxing lunch, snack or cocktail.  Service was excellent on this visit and my Caesar salad with Mahi Mahi was delicious.  The Fish Tacos were a bit bland according to my Wife.  The Kahala Hotel validates for four hours so forget Waikiki and come here for lunch or cocktails.  Truly a hidden gem.

EGGPLANT PARMESAN

DINNER AT HOME

Wow...was I amazed how good this Eggplant Parmesan turned out.  Made me a lover of Eggplant.Pretty simple recipe I got while watching Lidia's Kitchen on PBS.  Layers of sliced Eggplant, Parmesan Cheese and Tomato Sauce.  I added a bit of Mozzarella because we had some that needed to be used. Topped with a little fresh Italian Parsley and Basil.

SASHIMI, SHRIMP, CLAMS AND WINGS

DINNER AT HOME

My Wife wanted to go with a Pupu style dinner that included my Buffalo Chicken Wings.  We bought some fresh Ahi, Clams and Garlic Shrimp Poke and feasted with our Daughter on the lanai.  What a blessing to enjoy this meal with my gals and eat some of our favorite foods.  I cooked the Clams in White Wine, Butter, Shallots, Portuguese Sausage, Parsley and a ton of Garlic.  They came out darn good as did my Wings.  Love cooking Chicken Wings in the Air Fryer.  They get crispy on the outside but stay moist on the inside.  Enjoyed a crisp Chardonnay with all of this and loved it.
