DINNER AT HOME

Followed up Taco Tuesday with Taco Salad Wednesday to use up leftovers.  Sautéed some Black Beans with Onions and Jalapeños plus added Roasted Corn, Cheese, Avocado, Cheddar Cheese and Pico de Gallo, Sour Cream, Lettuce to the Taco Meat.  Delicious and very filling.

Tuesday must be my favorite day of the week because I love Taco Tuesday!  These Beef and Guacamole Tacos are an all time family fave.  My Daughter prefers a Taco Salad.  Low carb tortillas of course.

After Taco Tuesday comes the leftovers which made up a delicious Taco Salad.

Lettuce on the bottom.  Seasoned Ground Beef, more Lettuce, Cheese, Pico de Gallo and Cotija Cheese.

After Taco Night I took the leftovers to work in the form of a Taco Salad.  Shredded Lettuce, Seasoned Beef, Cheddar Cheese, Pico de Gallo and a sprinkle of Cotija Cheese.  Delicious!

After our Carne Asada Taco Night I got to enjoy a Carne Asada and Avocado Salad at the office.  This was so good and very satisfying.  Loved it!

My lovely Wife made me a delicious Taco Salad with Avocado to take to work.  Shredded Lettuce, Seasoned Beef, Cheddar Cheese, Pico de Gallo, Onion, Cilantro, Cotija Cheese and Avocado.  This really hit the spot and satisfied me until dinner.

After a delicious Taco Tuesday at home, my Wife made me a Taco Salad to take to the office.

This was delicious and a great way to enjoy taco ingredients without the tortillas.

Craving Tacos but they are not on my diet.  Instead I made a Taco Salad with Lettuce, Seasoned Ground Beef, Cheddar Cheese, Avocado, Pico de Gallo and a dollop of Sour Cream.  Totally satisfied my cravings and was so good.  Having this for lunch tomorrow too.

I love Tacos and on Taco Tuesday we made these perfect Beef Tacos.  They were absolutely 

delicious and satisfying.  My Wife perfected the cooking of the Corn Tortillas and these Tacos 

had the perfect crisp.

Was amazed to learn that the New Hope Chapel on Sand Island has a small cafe that serves lunch.  We ventured in today for a quick an inexpensive meal.  The menu is written on a white board and nothing is over $5.  I tried the Roasted Chicken Sandwich ($4.50).  Nice chunks of chicken with fresh tomato and lettuce.  Pretty good sandwich that filled me up.  The Tuna Salad ($4.50) was large and topped with a scoop of tuna with some sliced carrots.  Served with Ranch Dressing.  My co-workers tried the Taco Salad and seemed to really like it.  Nice to know we can get a healthy and inexpensive lunch served up with some scripture if desired.
