I was not expecting this dish to be great as I cooked it but holy cow it came out fantastic. Entire family loved this Garlic Parmesan Chicken that was packed with flavor. Really a winner and now something we will be making often. I will do a step by step recipe and post next time I make this
because I am sure you will love it. Plus it is pretty easy with ingredients you probably have at home.
Served with Potato Skins because we had some in the refrigerator that I wanted to use up. Sautéed Carrots in a little butter and a hint of honey.
GARLIC PARMESAN CHICKEN

FAMILY APPROVED MEAL......HEY...THAT'S MY VINO KELI!
This is definitely one our families absolute favorite pasta dishes. Easy to make and packed with flavor. We used fresh Sage from our backyard garden and purchased local Hamakua Mushrooms to make the sauce. Only thing not shown here is the Parmesan Cheese. You must add the Parmesan at the end to give this a big flavor pop. Make this recipe once and you will make it again and again!
PAPPARDELLE WITH MUSHROOMS, SAGE AND BUTTER
BUTTER, HAMAKUA MUSHROOMS, SAGE, LEMON AND PASTA
SLICE THE MUSHROOMS
YOU DON'T ADD WINE BUT I DO DRINK IT WHILE COOKING
BRING BUTTER TO LIGHT BROWN COLOR
ADD LOTS OF FRESH SAGE
WHEN THE SAGE GETS CRISPY IT IS READY. ADD LEMON JUICE TO TASTE
ADD THE MUSHROOMS, SALT AND PEPPER COOK MUSHROOMS AND THEN USE TONGS TO REMOVE THE SAGE. ADD PASTA AND STIR TO COAT
So lucky to live in Hawaii and be able to enjoy fresh Ahi Sashimi year round. Love enjoying Sashimi with a little Avocado and of course Wasabi and Soy Sauce.
Almost out of the Caviar we received a few weeks back. Good thing because the product expires at the end of the month. Really enjoying the Caviar. This New York Bagel with Cream Cheese and Caviar was delicious. Savored every bite and loved it!
Picked up some super fresh looking Halibut and prepared it with a simple Lemon Butter. I pan seared the Halibut to brown and then finished in 350 degree oven for just a few minutes. Came out perfect.
Topped the Halibut with Lemon Butter and Fried Shallots. This was a delicious restaurant quality meal that cost around $25 for three people and that includes all the veggies which I sautéed with Garlic, Shallots, Salt and Pepper.

NICE PIECE OF HALIBUT
OLIVE OIL, GARLIC, SALT AND PEPPER MARINADE. ROOM TEMP FOR 30 MINUTES
HALF STICK SOFTENED BUTTER AND ZEST OF ONE LEMON, SALT AND PEPPER
Topped Crab Cake with a little Cream Fraiche and Caviar. Was amazed what a great combination this was. The Cream Fraiche really goes well with the Crab and the Caviar.....well its Caviar!
We have a little remodeling project going on at home and my Wife likes to feed the contractors rather than having them drive off to find lunch. We used BBQ Pork Ribs to make great sandwiches with Cole Slaw and Pickles.
SALMON WITH HOLLANDAISE SAUCE AND CAVIAR DINNER AT HOME
This Salmon and Hollandaise Sauce dinner is one of our family favorites. Up there with the best and we took it to another level by topping the Salmon with Kaluga Caviar. Holy shit this was delicious.
Back to Guieb Cafe where this time I went with a Weekly Special which was a Seared Ahi Salad ($13). It was good but they only gave me a little bit of dressing for the salad. Needed more because these type of greens are pretty dry and bitter.

Blessed to be able to have friends Rich Miano, Greg Salas and Kanoa Leahey join Keli in filming a new Fujitsu television commercial. We filmed the spot in my library which is filled with a lot of University of Hawaii sports memorabilia which is fitting since Kanoa is "The Voice" of Hawaii sports and Rich and Greg were superstars on the Hawaii football team. Rich went on to play 11 seasons in the NFL with the Jets, Eagles and Falcons. Greg was drafted into the NFL in 2011 and played for the Rams, Patriots, Eagles, Jets, Lions and Bills. Incredible athletes and human beings who I am grateful to know and play a little golf with from time to time. Me, Greg and Robby Toma are renowned for taking down Miano and his team in a dog eat dog golf classic at Turtle Bay. Filming the commercial was a blast with some nice outtakes and bloopers. My sincere thanks to Greg Davis at KHON2 who directed and produced the spot. Greg is great to work with and always gets our message across with style. He is a true television professional who takes great pride in his work and knows his stuff. This spot was designed to promote the Fujitsu warranty and it was written by Kanoa Leahey, myself, Rich and Greg. The original script was longer but we really had to cut it down to make the .30 seconds for tv. I think it came out great and thank everyone who was involved with making this happen.
