KAU KAU GRILL BBQ RIBS & POKE

Love the Crew and food at Kau Kau Grill.  Probably the Best BBQ Ribs and Poke on the Island.  They only serve fresh Poke here and none of that chemically treated crap you get at most restaurants.  The Ribs are meaty, smokey, sweet, fall off the bone delicious!

BBQ RIBS AND CORNISH GAME HENS

DINNER AT HOME

I put a nice dry rub on a rack of ribs and then baked in the oven at 350 degrees for two hours.  Topped with BBQ Sauce and then finished on the BBQ.  My Wife marinated Cornish Game Hens in Lemon Juice, Olive Oil, Rosemary and Garlic overnight and then grilled them.
A bit charred on the outside but moist and juicy on the inside.

BBQ RIBS, COLE SLAW AND CORN

DINNER AT HOME

Pork Ribs were on sale at the market so I bought a slab.  Coated them with a dry rub of seasonings, covered with foil and baked in the oven at 275 for three hours.  Removed from the oven and covered them in BBQ Sauce.  Covered with foil and put back in oven at 250 degrees for about an hour.  The results were rib perfection.  The meat fell off the bone and the Ribs were moist and full of flavor.  Served with some homemade Cole Slaw and Corn on the Cobb.
What a great little dinner on the lanai.  Wife loved these Ribs!

BBQ RIBS AND CHICKEN

DINNER AT HOME

I have been craving BBQ Ribs for a few weeks.  Don't know why but just wanted some.  Funny thing is I don't eat a lot of Ribs.  I'll eat one or two and be satisfied and done.  My BBQ Chicken really satisfied too.  Think I liked the Chicken more than the Ribs this time.  Made a few sides to go with the BBQ for the perfect small backyard BBQ.

4TH OF JULY BBQ

Didn't really seem like 4th of July this year.  No fireworks or large gatherings so we stayed at home with just the family.  Cooked up Nathan Hot Dogs, Drew Burgers, BBQ Ribs, Cole Slaw and some fresh Sashimi.  Not as grand as past 4th of July BBQ's but still nice.

MEMORIAL DAY BBQ

DINNER AT HOME

Blessed to spend Memorial Day at home with my girls so I cooked them up a delicious BBQ and made everything myself.  Started with Ahi and Tako Poke which I picked up at Foodland Farms.  Made the Cole Slaw, Potato Mac and Cucumber/Tomato Salads, Roasted the Corn, Cooked the Ribs and made the Burgers.  Got to tell you that my Drew Burgers were the bomb.  Juicy and delicious.
Thankful and grateful to all Americans who have served and sacrificed for our great Nation.

Had some pretty forgettable BBQ at Joe Buck's in St. Louis.  Our waiter was terrible.  Started with the "Award Winning" Chicken Wings.  Award Winning?  These were bland and tasteless wings.  Not even the hot sauce could save these wings.  Had a waiter with the personality of a fly.  Guy was just not all there.  Loved the cornbread.  Moist on the inside and a nice crunch on the top.  The Brisket, Ribs and Pulled Pork were fair at best.

HARD ROCK CAFE - GUAM

I have not stepped foot in a Hard Rock Cafe for years but can remember the days when I went to every one possible to buy a t-shirt.   Still have quite the collection gathering dust in my closet.  On previous trips to Guam, I have avoided the Hard Rock.  This trip I had a work associate from California who wanted to go there. We entered through the gift shop on the ground floor and then walked up steps to the dining room where we were greeted by a very friendly staff.  We chose to sit on the balcony overlooking the main street.  It was about 90 degrees and humid and we were the only people out there.  Everyone else was sitting comfortably in the air conditioned main dining room.  As we sat outside the main dining room began to fill up with mostly twenty something year old Japanese tourists.  Turns out on this night there is an Elvis impersonator singing at 7:00.  We ordered some cold drinks and some Chicken Wings.  Half mild and half hot for me.  The wings were large and meaty.  Actually filled me up.  We ordered a Full Rack of Memphis Style Ribs for around $18.  Wow.....huge slab of beef that could have fed my entire family.  The ribs were meaty too and covered in a rich tangy sauce.  The Half BBQ Chicken was smothered in BBQ sauce and served with French Fries, Cole Slaw and BBQ Beans.  Elvis was in the building and performed two short shows.  Actually good lip syncing to some Elvis classics.
