These Spicy Bean Tostadas are so much better than any Mexican restaurant on Oahu.

I add Onion and Jalapeños to the Refried Beans to spice things up and then top with crisp chilled Lettuce, freshly grated Cheddar Cheese, Pico de Gallo and Cotija Chesse.  So good with a crunchy Ala Madre Low Carb Tortilla.

These homemade Tostadas were better than any Mexican restaurant in Hawaii and one of the best I have ever tasted.  The layers of flavors and textures made each bite a delicious explosion.  Started with a fried Ala Madre Low Carb Tortilla and then added a layer of 

Spicy Refried Beans with sautéed Onions and Jalapeños.  Then came the Taco Beef with sautéed Onions and Jalapeños.  Next up was some Hot Sauce and then a layer of Guacamole, Lettuce, Cheese, Pico de Gallo and Cotija Cheese.  These were beyond good.  

They were delicious!

Taco Tuesday took a twist when I made these amazing Bean and Avocado Tostadas.

Far better than any Mexican restaurant in Hawaii.  So good and with Ala Madre Low Carb Tortillas of course!

Delicious Tostadas with Rotisserie Chicken sautéed with Green Chili's, Onion, Garlic and Jalapeño.  Started with a base of Avocado Corn Salsa and topped with Chicken, Hot Sauce, Lettuce, Cheddar Cheese and Pico de Gallo.  Oh....how I love Tostadas and Tacos!

Loved the food and service at Los Garcias in San Jose.  This meal hit the spot and satisfied my cravings for Mexican food.  Just wish we had more days here so I could go back again and again and try different menu items.

I love Bean Burritos and this homemade version is super filling and delicious.  I could eat one of these or a Taco every day of the week.  We use A La Madre Low Carb Tortillas which taste just as good as regular high carb Tortillas.  Layers of flavor with Spicy Refried Beans, Guacamole, Lettuce, Cheese, Pico de Gallo, Hot Sauce and Cotija Cheese.

This was one of the best Tostadas of my life.  Spicy Refried Beans with sauted Onions and Jalapeños, Seasoned Ground Beef, Guacamole, Lettuce, Cheese, Pico de Gallo, Sour Cream and Hot Sauce.  Low carb A La Madre Tortilla of course.  So good!

Readers of my blog know that I am a certified Tacoholic.  Could eat Tacos every single day if they are good.  Raul's Shack has some of the best Crunchy Tacos on the planet.  Every trip to San Diego, we eat here one or two times.  Always get the Crunchy Shredded Beef Tacos.  On this visit we also enjoyed the Beef Taquitos and a huge Chicken Tostada.  Prices here are super cheap compared to Hawaii Mexican food.  I posted just a portion of the menu so you can see the prices.  This is a Great Eats Hawaii FAVORITE!

After Taco Tuesday at Casa de Santos comes Tostada Wednesday with the leftovers.  Nice layer of Spicy Refried Beans, Beef, Guacamole, Lettuce, Cheese, Pico de Gallo and a bit of Cotija Cheese.  So filling and oh so delicious. We use A La Madre Low Carb Tortillas which have 3 net carbs too.

I have fond memories of visiting Olvera Street when I was a young boy.  The place seemed huge back then and filled with the colors and smells of Mexico.  The last time I was here was before my Dad passed away and we found the best Taquitos and Chips and Salsa.  We could not find that old place on this visit and ended up at El Rancho Grande.  What I will remember the most about this place is the service by a man that may have been the owner.  He was warm, gracious and even brought a free plate of Mexican Rice out for my Daughter.  The Taquitos were good.  I was surprised that they used Ground Beef for the Tacos.  I am a fan of Shredded Beef but these tasted ok.  The Chicken Tostada was huge and filling.
