RIB EYE AND ROASTED POTATOES WITH MUSHROOMS, ONIONS AND GARLIC

RIB EYE WITH ROASTED POTATOES

This was one of the best steak dinners of my life.  Top five for sure.  Bought some amazing Chef Cut Rib Eye Steaks and my Wife did the rest with the exception of the Roasted Potatoes.  I made these using Red and Russet Potatoes and they were incredible.  I cut the potatoes and then coated them with a lot of chopped garlic, salt, pepper and olive oil.  In another pan I sautéed more garlic with Mushrooms and Onions in olive oil and butter.  Set the Mushroom mixture aside.  Placed the Potatoes on Parchment Paper covered sheet pan and cooked at 400 degrees for about 45 minutes.  I added the Mushrooms and Onions to the Potatoes for the last ten minutes in the oven.  When the Potatoes looked crispy I took them out and added fresh chopped Parsley.  The result were the best Potatoes, Mushrooms and Onion with Garlic I have ever tasted.  This dinner was off the charts and so satisfying!

Enjoyed a very simple Rib Eye Steak with fresh cut Air Fried French Fries.  My Wife cooks the perfect steak with a nice spice char on top and pink in the middle.  Nice glass of Cabernet and I would say this was the perfect dinner after a long day at work.

My Wife cooks the most amazing steaks.  As good or better than most Steak Houses.  First she carmelizes both sides of the steak with a mixture of sea salt, freshly cracked pepper and brown sugar.
Then into a 450 degree oven for just a few minutes with a pat of butter on top.  Perfect Medium Rare every time.  Served up with some buttery Mashed Potatoes.  Simple and so delicious!

One of those nights where we did not have a lot of time to cook and wanted to use up what we had in the refrigerator.  Nice Rib Eye Steak with Broccoli and Peas and Corn.  Simple, delicious and satisfying.  Cannot ask for much more.

Surprised to come home to a delicious Bone-In Rib Eye dinner.  This steak was amazing.  Coated with a light mixture of salt, pepper and brown sugar which carmelized to perfection.  Served with Roasted Cauliflower and Asparagus.  So yummy!!!

There is nothing better than a Grilled Steak over the Memorial Day Holiday.  We cooked up this delicious steak dinner at a fraction of the cost of a restaurant and it was delicious.  We use generous amounts of salt, pepper and a pinch of brown sugar to season the beef and then sear both sides until there is a nice char.  Finish in a 400 degree oven with a little butter on top and you have a delicious steak that will compare or be better than most restaurants in town.   Served with Garlic Mashed Potatoes and  sautéed Broccoli with Carrots.

Was surprised to come home to a steak dinner.  We do not eat a lot of meat at home.  Seems to be more of a chicken, fish and pasta family here.  Turns out that steak was actually cheaper than fresh fish at the market.  Picked up two nice Rib Eyes for around $10 total.  My wife can cook a steak at home that is total restaurant quality.  She pan sears the meat first and then pops it in the oven with a small amount of butter on top.  Always cooks to a perfect medium rare.  The vegetables and mashed potatoes were good too.  I think the key thing to cooking a good steak is to make sure that you season the meat.  It takes a good bit of salt and pepper to bring out flavor.  The butter on top always good to improve flavor.

Enjoyed a really good dinner on the Big Island.  The Kamuela Provision Company serves up some nice steak and fresh seafood at the Hilton Waikoloa Resort.  The restaurant is located on the southern most tip of the property and features indoor and outdoor dining with incredible ocean and sunset views.  We began with pupu's served at the inside bar.  The bartender was friendly and the Manager really tried to make us feel comfortable and even served us ice water without asking.  We started with some fresh oysters.  They were large and pretty tasty.  The Ahi Poke was a disappointment.  Did not seem fresh.  Really mushy.  As the sun began to set, we were escorted to a table on the outside lanai.  While the sun was hot while going down, when it finally set it was comfortable and beautiful.  I tried the Tomato and Onion Salad.  Served with Bleu Cheese and Balsamic Dressing.  This was absolutely delicious.  Perfect blend of ingredients and super fresh.  Loved this dish.  The Rib Eye Steak did not have a bone but was actually really good.  Served on mashed potatoes with thinly sliced fried onions on top.  This place is not cheap.  Steak runs around $50.  The staff was excellent and food was good.  All good if you can live with the prices.

Wow....how great it was to get back to the original Side Street Inn.  The newer Side Street on Kapahulu does not compare to the original.  Once again we enjoyed great service and the ambiance of an Hawaii classic bar/restaurant.  I love this place.  Simple, no attitude and great waitresses that care about your experience no matter how busy it gets.  Our rookie waitress Annie was the best.  Just off her training week and already a seasoned professional.  We started with the Garlic Soy Beans.  Warm and filled with the taste of garlic.  Followed this up with the Manila Clams in white wine and butter.  Great broth and clam flavor.  The clams were small but filled with flavor.  The bread soaked in the sauce was a winner.  We enjoyed Hawaii's best Spinach Salad once again.  Fresh Spinach with bacon, cheese, onions, egg and balsamic dressing.  Really a great salad.  We also had the Worlds Best Fried Rice.  Have never had better.  We love Side Street's Fried Rice.  It is filled with vegetables, various meats and just a perfect blend of everything.  Finished the meal with a blazing plate of Rib Eye Steak.  Served on a sizzling platter and loaded with sauteed onions and mushrooms.  Pretty darn good.
