FRENCH ONION SOUP - PRESSURE COOKER RECIPE

 FRENCH ONION SOUP
COOKED IN PRESSURE COOKER

We had a bunch of onions leftover after serving a large group tacos with salsa.  Did not want them to go to waste so I went to my computer and googled French Onion Soup.  As I looked through the recipes, I thought about using my pressure cooker rather than the stove because it was hot.  I pulled out my Great Food Fast Cookbook by Bob Warden and found a very fast and simple pressure cooker recipe for French Onion Soup.  In about half an hour, I had a delicious bowl of soup on the table that exceeded my expectations.  Once again Bob Warden came through for me.  If you have a pressure cooker or are going to buy one, make sure you also buy Bob Warden's Great Food Fast Cookbook.  The book is filled with dozens of recipes that are fool proof, fast and delicious.  I really like the fact that the recipes in this cookbook use ingredients that are available everywhere and staples in most pantries.   You may buy the Bob Warden cookbook on Amazon via the link below:

FRENCH ONION SOUP

ANOTHER SIMPLE AND DELICIOUS BOB WARDEN RECIPE

ONIONS, BEEF STOCK, GARLIC POWDER, BAY LEAVES, DRIED THYME,
RED WINE, BROWN SUGAR, BUTTER, SALT AND PEPPER
THINLY SLICE THREE LARGE ONIONS
SET PRESSURE COOKER TO "BROWN" SETTING
ADD 3 TABLESPOONS OF BUTTER AND 1 TABLESPOON OF VEGETABLE OIL.
HEAT UNTIL MELTED AND SIZZLING
ADD ONIONS AND 2 TEASPOONS OF LIGHT BROWN SUGAR TO MELTED BUTTER AND OIL
HEAT ONIONS UNTIL THEY ARE CARAMELIZED
ADD BAY LEAVES,  GARLIC POWDER, DRIED THYME, SALT AND PEPPER
STIR IN 4 CUPS OF BEEF STOCK AND 1 CUP OF DRY RED WINE
PRESSURE COOK ON HIGH FOR 8 MINUTES
AFTER 8 MINUTES DO A QUICK RELEASE 
FINISHED SOUP IS DELICIOUS
MELTED PROVOLONE CHEESE OVER THE TOP

Enjoyed some absolutely fabulous Mexican food at Panama Joes in Long Beach.  This is one of the best bars and restaurants on 2nd Street and should be on every ones list when visiting Belmont Shores. The Mexican food here is off the charts good and the place throws a big party for NFL Football games with the waiters and waitresses wearing jerseys from their favorite teams.  As we walked into the dining area,  I saw a tower of beer with its own tap on a table and thought it was cool.  Had to order one of those first.  The Football Pabst Blue Ribbon Tower was $20.  Cold beer and Mexican food.  I was in heaven.  I enjoyed a Shredded Beef Taco and Chicken Enchilada with Beans and Rice ($9.50).  This was one of the best plates of Mexican food I have ever eaten.  A plate like this in Hawaii would be $20 and tasteless.  I savored every single bite and even finished off the rice and beans which were delicious.  As I moaned with happiness, two other people enjoying the Chili Relleno, Taco and Enchilada Combination ($13) were both saying this is the best Mexican food they have ever eaten.  I was blown away by the price of their triple combination plate at $13.  What a bargain.  The table shared Chips and Salsa and Ceviche De Pescado ($13).  The Ceviche was fresh and was filled with flavor.  I ordered some Taquitos for the table ($6).  The Taquitos were awesome.  Three corn tortillas filled with seasoned chicken.  I say seasoned because when you buy Taquitos in Hawaii the chicken is usually bland and tasteless.  These Taquitos were stuffed with a good amount of chicken and covered in Guacamole and Sour Creme.  The Taqueria Carnitas ($6) were another hit.  Three Carnitas Tacos that were putting a big smile on one of the diners face.  The Chicken Tinga Burrito ($7.50) looked a little plain when presented but again was packed with flavor.  Several diners shared the Caesar Salad ($8.50) and the kitchen was happy to split the salad onto several plates.  The Tacos Pescado ($11.50) received another accolade as "best Mexican food ever".  The food and prices here are amazing.  You cannot go wrong at Panama Joes and you wont find a better deal on price from San Diego to San Francisco when dining out.

Blessed to play Trump National Golf Course on a warm and clear Southern California day.  This course is spectacular and includes the worlds most expensive golf hole.  It is reported that the 17th hole at Trump National cost a staggering 63 million dollars to build.  Trump spared no expensive building this golf gem on the cliffs of Palos Verdes.  The fairways are narrow here so you have to hit it straight.  Once you walk up to the waterfall on hole #1 and step onto the elevated green you know you are in for something special.  This course is cool.  Way cool.  Throw in a great staff with Manny the Starter and Joey Lewis the Golf Pro plus an incredible bar and restaurant and you have what has to be one of the finest golf experiences in Southern California. We arrived with very little time to warm up but did enjoy a quick bowl of Clam Chowder before hitting the first hole.  The Chowder was delicious.  A nice glass of champagne helped to relax my monster swing!
