Enjoyed Uncle's Chicken at the desk.  I ordered the Grilled Chicken Sandwich because it looked good on the website and included Lettuce and Tomato.  Not bad.

DINNER AT HOME

With Keli out with friends and the Wife resting after visiting the doctor, I was alone for dinner with the dog.  We had leftover BBQ Chicken and Hamburger Buns so I made this delicious BBQ Chicken Sandwich with Lettuce and Onion.  Actually loved it!

Finally got my hands and mouth on the new Popeye's Chicken Sandwich.  Loved it!  I got the Spicy version and it really did have some kick.  The chicken was crispy on the outside and juicy on the inside.  I was surprised and happy to see the large size of the chicken breast.  This is a meal. The toasted bun and pickles really make a difference and elevated this sandwich above many.

Back on Maui and another lunch at Tin Roof Maui.  Damn this place is good.  I had the Fried Chicken Sandwich ($7) and it was delicious.  The sandwich was huge and I could only finish about 2/3 of it.  Just wish they put more of the cabbage on the bottom.  Once again we ordered online and paid with a credit card.  We received a confirmation text within seconds and then were texted again when the food was ready for pickup.  This makes it so easy and convenient!

Got home a little late and had to make do what we had in the fridge.  Took what was left of a Rotisserie Chicken and made incredibly delicious Chicken Salad Sandwiches.  Added chopped Carrots, Onions, Jalapeño and Celery to Chicken and mixed with a bit of Relish and Mayo.  Always need a little  Lettuce and American Cheese to make this sandwich pop.  Tomato also good but we were out.  Seriously good Sandwich!

Taking a look in the refrigerator and had to come up with a dinner with with some buns we had leftover.  Thinking sandwiches, I went to the freezer and pulled out some Chicken Thighs.  Since we had both purple and regular cabbage I went for a BBQ Chicken Sandwich with Cole Slaw.  I made some small Sliders for my daughter and the larger sandwiches for me and the wife.   Result was delicious.  To cook the chicken I grilled the thighs on a grill pan and then finished in a 350 degree oven for 30 minutes.  Pulled all of the chicken off the bones and placed them in a pot and mixed in BBQ Sauce.  Heated and placed chicken on bun and topped with Cole Slaw and Pickles.  These sandwiches were a big hit with my girls and me.
