BISON CHILI

DINNER AT HOME

We had to completely remove everything from our freezer when it died and there was some Bison meat that we had to use up fast.  Decided to make Chili with Bison meat rather than ground beef.  This was probably one of the best Chili's I have ever made.  My Wife wanted Kidney Beans so I added them.  Otherwise I would have left them out.  Served with my fave Nathan's Hot Dog without the bun to stay low carb.  Delicious!

I was craving Chili so I cooked up a batch using Ground Beef and Sausage.  Made it spicy with Roasted Jalapeño, Serrano and Anaheim Peppers.  I don't like a lot of Beans in my Chili so I only used one can of Black Beans for the entire batch. This Chili packs a punch and hits the spot.

CHILI WITH BEEF, CHEESE, ONIONS AND SOUR CREAM

LUNCH AT HOME

I have been craving Chili since I saw an Instagram post of a local chef making it last week.
Since we are in lockdown, I decided to make homemade Chili for lunch.  Simple recipe that anyone can whip up in about an hour.  Flavor was fantastic.  We did not have any Kidney Beans so this is a beanless Chili.  Loved it!

CHILI WITH BEEF, CHEESE, ONIONS AND SOUR CREAM
BROWNED GROUND BEEF AND SOME BOTTOM ROUND.  SEASONED WITH SALT AND PEPPER.
SET ASIDE THE MEAT 
SAUTED A LARGE ONION AND TWO JALAPEÑOS
ADDED GARLIC
1/4 CUP OF CHILI SPICES AND 1 TEASPOON OF TOMATO PASTE AND TEASPOON OF SALT.
I ALSO ADDED CAYENNE PEPPER FOR SOME HEAT
MIX IT ALL UP FOR ABOUT A MINUTE OR TWO
ADDED TWO 14OZ CANS OF TOMATOES AND 1 1/2 CUPS OF BEEF BROTH
CRUSED UP ALL THE TOMATOES SO THEY WERE NOT IN LARGE CHUNKS.  COOK UNTIL BOILING
REDUCE HEAT AND ADD IN THE BEEF
SIMMER FOR 3O MINUTES TO AN HOUR

TOMATO AND BASIL SOUP

DINNER AT HOME 

Bought a new contraption for the kitchen after watching QVC a few weeks back.  When I saw the guy on t.v. place frozen ribs in the cooker and then eat them in 20 minutes I was sold.  I purchased Bob Warden's Great Food Fast Cookbook with the Pressure Cooker.  The book is filled with recipes designed for the Pressure Cooker.  The book includes chapters on Soups and Starters, Beef, Poultry, Pork, Seafood, Pasta and Rice, Vegetables and Sides, Lighter Fare, Holiday Cooking and Desserts.  The wife wanted Tomato and Basil Soup so I followed the easy recipe and had a delicious home made soup done in under 30 minutes.  The actual pressure cooking time is only 8 minutes.  The recipe did not call for it, but I used a hand blender at the end to blend all the tomatoes into a silky smooth soup.  If you don't do this there will be chunks of diced tomato and basil in the soup.  Really liked the fact that you can sauté and brown in the pressure cooker before you set the pressure time.  This reduces the amount of dishes.  Really cool to throw all the ingredients in a pot and have meals done in 8 to 20 minutes.  I made Chili in the pressure cooker too.  It cooked fresh kidney beans and made a great chili in just 26 minutes.  You may buy the Bob Warden cookbook on Amazon via the link below:

NO NEED FOR ADDITIONAL PANS.
THROW IN THE INGREDIENTS AND PRESSURE COOK
FOR ONLY 8 MINUTES!
ADDED CREME AFTER PRESSURE COOKING FOR 8 MINUTES
TOMATO AND BASIL SOUP GARNISHED WITH
FRESH BASIL AND PARMESAN CHEESE.
SERVED WITH GRILLED CHEESE SANDWICH

TITO'S TACOS - CULVER CITY

TITO'S TACOS
CULVER CITY, CALIFORNIA 

We drove by Tito's Tacos and saw a line before 11:00 am.  We drove by again and saw a line even longer in the evening.  My Dad's wife Heide (bless her soul), said that we had to try a Tito's Taco.  I am always in search of a good taco and was more than happy to stop in.  Perhaps this would be the one stop that would "wow" me during our visit to California.  We began by waiting in line outside, but then discovered that there was indoor seating and another line of windows inside where it was warm.  Without hesitation, Heide went to the window and ordered just about everything on the menu for us to try.  Tacos, burrito, tamale, chili, two kinds of enchiladas and a weeks worth of chips and salsa.  THANK YOU HEIDE.  This was awesome.  I immediately attacked the tacos ($1.75 plus $.60 for cheese).  A crunchy taco that is filled with shredded beef and then deep fried.  Toss on some lettuce, cheese and their fresh salsa and you have one of the best tacos in Los Angeles.  I absolutely loved my Tito's Taco.  They have a crunch and flavor that is addicting.  No wonder people line up in droves and happily carry out boxes of these Mexican treats.  It is amazing to see box after box of tacos coming out of the kitchen.  The rows of tacos are placed in a box and then covered with a lid for save travel.  Tito's does it right.  They have a very limited menu.  When you order a taco, it comes one way.  Beef with or without cheese.  Thats it.  We also tried the burrito.  This is a large tortilla filled with pure meat and sauce.  Nothing else unless you request beans or cheese.  It was good, but the tacos really kept my mouth watering.  The Chicken and Beef Enchiladas were good but pretty much taste the same.  The Tamale was mostly Masa so it was not my favorite.  The Chili was good.  I think it is the same meat and sauce used in the burrito.  The beans and rice here are excellent and the fresh salsa is really good.  The chips are made fresh and served warm.  I could sit there and eat these things for hours.
