Our friends took a trip to Alaska and did some fishing.  They brought back Salmon and Halibut that they actually caught themselves.  My Wife cooked this incredible dinner and made a White Wine, Shallot, Ginger, Tomato and Calibrian Chili Sauce.  Pretty much fish perfection!

Our friends brought back Salmon and Halibut from their Alaska fishing vacation.  Last week we cooked the Salmon and it was incredible.  This Halibut however could be one of the best fish dinners of my life.  I Butter Poached the Halibut and topped it with a Poached Egg.  Also made a White Wine, Shallot Cream Sauce that was out of this world good and a great compliment to the fish and Risotto.  Entire family loved this dish and thought it was better than most restaurants!

Our friends took a trip to Alaska and brought us home Salmon and Halibut that they actually caught.  This Halibut was amazing.  Super fresh and flavorful with a light texture.  Served with Avocado and Tomato Relish plus a White Wine and Shallot Beurre Blanc.
