I had to use up what was left of a Rotisserie Chicken.  Made this delicious Chicken Salad using my "go to" recipe.  This was so good that I took some to work for lunch the next day.

Used my great Tuna Salad recipe to make this delicious Chicken Salad using what was left of a Rotisserie Chicken we picked up at Costco.  Served with Cauliflower Tortilla Chips to stay low carb.  This is so good!

I love this Chicken Salad recipe so much and we use it for Tuna too.  We had leftover Rotisserie Chicken so I diced it up and added a bunch of veggies.  Added Lettuce, Tomato, Avocado and American Cheese to make the flavor of this sandwich pop.  Love it!

Trying to use up a Rotisserie Chicken so I made Chicken Salad using my go to recipe for Chicken and Tuna Salad.  Important to not include the skin when using Rotisserie Chicken.  On this evening the Wife and Daughter enjoyed Chicken Salad and I went for a Chicken Salad Sandwich with American Cheese.  So yummy!

Once again I had to finish off one of the Costco Rotisserie Chickens so I removed all of the Chicken off the bones and diced it all up in small pieces.  Added chopped carrots, red onion, celery, jalapeño

and a little mayo and relish to make a delicious Chicken Salad.  Placed over chilled Pasta with a little bit of Italian Dressing.  Topped with American Cheese and Sun Dried Tomatoes.
