A whole Rotisserie Chicken is still $4.99 at Sam's Club.  This has to be the best food deal in Hawaii.  Made this simple and delicious salad for dinner.

ROTISSERIE CHICKEN SALAD WITH CAULIFLOWER CHIPS

Used my great Tuna Salad recipe to make this delicious Chicken Salad using what was left of a Rotisserie Chicken we picked up at Costco.  Served with Cauliflower Tortilla Chips to stay low carb.  This is so good!

We love the $6 Rotisserie Chickens from Costco and Sam's Club.  Cannot beat the price for a whole chicken that taste delicious.  We eat the chicken various ways.  Sometimes served sliced with rice and vegetables and many time in salads.  On this evening I did up a super fresh and lite salad using Romaine and Iceberg Lettuce, Japanese Cucumbers, Carrots, Tomatoes, Avocado and a little bit of JalapeƱo Cheddar Cheese.  Topped the salad with diced chicken and it was terrific.

ROTISSERIE CHICKEN SALAD

ROTISSERIE CHICKEN SALAD

There is no better deal in town than the $4.99 Rotisserie Chicken sold at Costco and Sam's Club.  We picked up a Rotisserie Chicken at Sam's and it yielded two meals for our family of three.  We find the Sam's Club chickens to be less fatty and more seasoned than the Costco version.  We love the Costco chickens too, but on this occasion we were shopping at Sam's.  I had half of a chicken left and wanted to prepare a dinner that was somewhat healthy as I am on a mission to lose some weight once again.  I literally took every vegetable that we had in our refrigerator and sliced and diced until I filled a large bowl.  Lettuce, Spinach, Carrots, Celery, Red Onion and Cabbage were included.  Finished the salad by cutting up the chicken and adding some Bacon, Cheddar, Provolone and Fontina Cheeses, Salami and a Boiled Egg.  We used Panera Balsamic Dressing and it was delicious.  This was a filling salad with lots of different flavors and textures.  Really good meal at a bargain price.  Wish they would have had these $5 chickens back in the day when  I was broke and could only afford Cup of Noodles.  I could have made one of these birds last a week and would have been quite happy.
