Enjoyed getting back on a golf course after one year of not playing.  We only got in 9 holes due to having dinner reservations but it was nice to be in the sun, enjoy the beauty and hit an occasional good shot.

Truly enjoyed a pre-round lunch and post round happy hour at Persimmon Restaurant at Anthem Country Club.  The restaurant, clubhouse and views are beautiful.  We had lunch indoors in the bar and cocktails and pupu's outside on the patio after playing 9 holes of golf.  The feeling here was relaxed.  Food and service great!

My lovely Wife wanted a salad for her Happy Birthday dinner at home.  Stayed low carb and made a Mahi Mahi and Shrimp Salad with Grilled Zucchini, Avocado, Egg, Roasted Corn, Carrots, Bell Pepper, Romaine and Spinach.  She finished everything on the plate so I think I did good!

Cooked Shredded Beef for 8 hours in the slow cooker over the weekend and made these delicious tacos.  Low carb tortillas of course!  One of my fave foods on earth.

Made Nachos using the Air Fryer and A La Madre Low Carb Tortillas.  Tasted absolutely delicious and you could not tell the difference vs fried chips and high carb tortillas.

Ahi was on sale for $6.99 per pound so this dinner was under $10 for two.  The simple recipe is packed with flavor and a winner.  Takes only minutes to make.  First preheat the oven to 400 degrees.  Salt and Pepper the Ahi.  Chop a good bit of garlic to coat the top of the Ahi.  Sear the bottom only in a mixture of butter and a little bit of Soy Sauce for about two minutes.  Spoon the butter/shoyu mixture over the Ahi and then place in oven for around 5 minutes.

BAKED ZUCCHINI WITH MOZZARELLA AND MEAT SAUCE

This dish looked like shit but was actually delicious.  I scored the Zucchini and then browned it in oil.  Baked at 450 for around 30 minutes.  Topped with Parmesan and Mozzarella Cheese.

Served with a Tomato and Meat Sauce.  The Zucchini was perfect and cut like butter.

Trying to stay very low carb after my Happy Birthday weekend of eating out.  This Chef Salad with Ham, Roasted Chicken, Bacon, Avocado, Swiss Cheese, Egg, Cucumber, Tomatoes and Roasted Corn hit the spot.  Totally delicious, filling and satisfying.

This is probably one of our absolute favorite dinners at home.  The Wild Alaskan Sockeye Salmon is packed with flavor and so moist.  The Hollandaise Sauce adds even more flavor and pairs perfectly with the Salmon, Asparagus and Rice.

I love a good chilled Wedge Salad and the ones we make at home are much better than most restaurants.  This one included Roasted Beets, Avocado, Egg, Bacon, Tomatoes, Green Onion, Crumbled Blue Cheese and Blue Cheese Dressing.  Salad perfection!

We are not big buffet eaters but did want to sample the Sunday Brunch at the Plumeria Beach House during our stay.  Food was excellent and there is so much more than shown here.  This is just me eating mostly low carb.  Believe me you will not be disappointed with all the selections here.  Something for everyone and tons of carbs if you want them.  Price is $55.

This was one of the best dinners ever.  Everything was delicious.  Love the Lobster Bisque, Pizza, Ebe Caviar and Carbonara!  Ate them all and was in heaven.  My Wife and her friend loved the Uni Pasta and my buddy loved the Squid Ink Pasta.  Add a couple bottles of Italian vino and this was an exceptional dining experience.  Wait staff and Manager, Maria are amazing.  Truly professional and attentive service.  This is my favorite restaurant on Oahu!
