DINNER AT HOME
I make this salad during my "try to lose weight" weeks and when doing intermittent fasting.
I won't eat for 24 to 48 hours and then enjoy a bowl of this salad. Super delicious and filling. In fact, I am kind of addicted to this salad now and can eat it twice a day and be happy.
Pretty much use whatever we have in the refrigerator but always with a lot of fresh vegetables. This batch included Canned Tuna Fish, Carrots, Celery, Onion, Cabbage, Lettuce, Cucumber, Black Beans, Corn and Avocado. Last week's version included Cannellini Beans in place of the Black Beans. I also add bit of American Cheese cut in small cubes and always Ken's Zesty Italian Salad Dressing. The Dressing really brings everything together and kicks the taste way up. Try this and I guarantee you will love it. Don't add the dressing until you are ready to eat a portion and leave the rest dry until you eat it.
