SHRIMP, CHICKEN AND SAUSAGE JAMBALAYA

DINNER AT HOME

For some reason I was craving Jambalaya so I decided to make a batch using Shrimp, Chicken and Andouille Sausage that we had in the fridge.  End result was pretty good but a bit too spicy for my Wife and Daughter.  I put a whole chopped JalapeƱo in the recipe which was a bit too much.  Satisfied by craving for Jambalaya though.

SHRIMP, CHICKEN AND ANDOUILLE SAUSAGE JAMBALAYA

PREP THE VEGGIES

BROWN THE SAUSAGE

CUT UP SOME CHICKEN BREASTS

BROWN THE CHICKEN

SAUTE THE VEGGIES

ADD RICE

ADD CHICKEN STOCK

ADD TOMATOES AND ALL THE SPICES

BRING TO A SIMMER

ADD IN THE CHICKEN AND SHRIMP

JAMBALAYA

ZERO FAT

We are always looking for tasty and fat free side dishes. Now that Zatarain's has come out with Reduced Sodium versions of their most popular rice dishes we can enjoy these more often. We enjoy the Red Beans and Rice, Jambalaya, Dirty Rice and Black Beans and Rice with chicken, fish and steak entrees. The rice is easy to make. Add water, boil and simmer. Comes out perfect every time.

Our newlywed friends Mark and Stephanie turned us on the the Charltres House Cafe. They like it alot and went their several times. During our first visit we enjoyed a bloody mary with them. These things are really good. They soak the vodka in picked veggies and then add some of the veggies to the drink. Stephanie called them salads in a glass. Our second time back we tried the crawfish etoufee, jambalaya and gumbo. The gumbo and etoufee were great, but the jambalaya was a little mushy and did not have taste. Overall excellent little spot for lunch and a cocktail. Thanks Mark and Steph for this one.
