PASTA WITH ROASTED TOMATOES AND ONION
DINNER AT HOME
This simple Pasta dish that I learned from Lidia's Kitchen on PBS was an instant family favorite and one of the best pasta dishes of my life. Better than a restaurant and so quick and simple to make.
Start by cutting Sweet Onions and Tomatoes. Sprinkle with salt and pepper. Place a dab of Tomato or Sun Dried Tomato Paste on the Tomatoes and spread all around. Hit everything with a little Olive oil. Bake at 375 degrees for 30-40 minutes or until everything is slightly browned. Remove and rough chop. In a large pan cook 3-4 cloves of Garlic in Olive Oil. Add a sprinkle of Crushed Red Pepper for heat. Add the Onion and Tomatoes to the Garlic and simmer/stir on low heat. Salt and Pepper to taste and add some fresh chopped Italian Parsley and Basil. Cook some Spaghetti until al dente. Ladle some water from the Spaghetti into the sauce. Continue to add water to the sauce until you have a thickness and consistency that you like. Drain the pasta and add to sauce. Coat spaghetti with sauce and plate. Top with more fresh Italian Parsley, Basil and Parmesan Cheese. Guarantee you will love this dish. We made it again a few days later because we were all craving it. Had a friend over and she helped make this dish - loved it and will be making it at her home.
