I love the food and staff at Kahai Street Kitchen.  Some of the most dedicated and hard working people I know.  Always working to turn out some of the best Plate Lunches in Hawaii.  These are elevated Plate Lunches that are restaurant quality and always delicious.  I went with the Sausage Crusted Meatloaf with all veggies to stay low carb.  Absolutely delicious!

Another delicious and filling lunch from Guieb Cafe.  Enjoyed this Meatloaf at my desk and it was moist and delicious.

Looking in the refrigerator and I see leftover Meatloaf and a few Bell Peppers that really need to be used before they spoiled.  Decided to place the Meatloaf in the Peppers and top with lots of Mozzarella Cheese.  Baked in oven for around 45 minutes and served with a Tomato Basil Sauce.  I really liked this.

I have not made Meatloaf in ages.  For some reason I was thinking about it a lot over the weekend so I checked the refrigerator and found we had all of the ingredients.  Normally would serve Meatloaf with Mashed Potatoes or Rice but going low carb made me think outside the box for a replacement starch.  I went with a mixture of Cauliflower and Zucchini mixed with Butter and Mozzarella Cheese.  Believe it or not the veggies were delicious.  Oh..and the Meatloaf.  Loved it!

For some reason I was craving Meatloaf.  We had some ground beef so I used what we had in the house to cook up this meatloaf dish.  The Ketchup, Vinegar and Brown Sugar Glaze made this taste

so good.  Really good Meatloaf if you ask me and the Wife!
