DINNER AT HOME

Wow...this had to be one of the best Lamb dinners of my life.  My wife herb crusted the Lamb with dijon mustard, garlic, thyme, rosemary, salt and pepper.  Cooked to a perfect medium rare and served with mashed potatoes and asparagus.  The flavor of the Lamb was amazing.  This was better than most restaurants at a fraction of the price.  Loved it!

If you follow this blog you know that we rarely dine out on Holidays unless we are traveling.  When at home, we like to experience restaurant quality meals at a fraction of the price while still wearing our shorts and t-shirts. This meal for three was less than $25 total.   For Christmas Eve I cooked a delicious Rack of Lamb that was easy to prepare and done in around 30 minutes. I coat the Rack with a mixture of Grey Poupon Mustard, Horseradish, Thyme, Garlic and Rosemary before putting it in the oven at 450 degrees for around 20 minutes or to an internal temperature of 130 degrees for medium rare.  Served with Garlic Mashed Potatoes and Honey Glazed Carrots.

HEATED OLIVE OIL IN PAN AND SEASONED WITH OIL WITH GARLIC
SEASON THE RACK OF LAMB WITH SALT AND PEPPER AND THEN SEAR BOTH SIDES ON HIGH HEAT
SEARED RACK OF LAMB IS NOW READY TO BE HERB COATED
GREY POUPON MUSTARD, HORSERADISH, THYME, GARLIC AND ROSEMARY
BAKED IN OVEN AT 450 DEGREES FOR 20 MINUTES - 130 DEGREE INTERNAL TEMPERATURE
COOKED TO A PERFECT MEDIUM RARE

HERB CRUSTED RACK OF LAMB - DINNER AT HOME

Cooked my girls an incredible Rack of Lamb for Valentines Day.  We love staying at home on holidays.  I like being home and always attempt to make a restaurant quality meal without the crowds and high cost.  This entire meal was under $40 for three.  The Rack of Lamb recipe is really simple.  You salt and pepper the rack and then brown both sides in olive oil.  Remove the rack and coat it with Dijon Mustard.  Cover in a herb rub that includes rosemary, thyme, parsley and garlic.  Pop this is a pre-heated 400 degree oven and cook for about 30 minutes for medium rare.  We like our lamb pink and not overcooked.  Remove from oven and cover with foil and rest for 10 minutes.  That's it.  You will love the flavor.  Paired the Lamb with some fantastic roasted potatoes.  I simply cut up a variety of small potatoes and placed them in a bowl with olive oil, garlic and rosemary.  Added lots of salt and pepper and then placed on a foil covered baking pan.  Covered the potatoes with foil and baked for one hour.  Took the foil off the top for the last 20 minutes so they would brown up.  This was simple and delicious.  My girls devoured everything on their plate.  My daughter chewed the Lamb down to the bone and asked for more.

AUSTRALIAN RACK OF LAMB
FRESH HERB RUB, DIJON MUSTARD AND GREAT RACK OF LAMB
FRESH HERB RUB - GARLIC, ROSEMARY, THYME AND PARSLEY
SALT AND PEPPER BOTH SIDES OF THE RACK OF LAMB
BROWN THE RACK OF LAMB IN TABLESPOON OF OLIVE OIL - ABOUT 2-3 MINUTES ON EACH SIDE
BROWNED RACK OF LAMB REMOVED FROM PAN
COAT RACK OF LAMB WITH DIJON MUSTARD
APPLY HERB RUB TO ALL SIDES OF THE RACK OF LAMB
PLACE IN 400 DEGREE PRE-HEATED OVEN FOR ABOUT 1/2 HOUR FOR MEDIUM RARE
COOKED RACK OF LAMB A PERFECT MEDIUM RARE - LET REST 10 MINUTES BEFORE CUTTING
RACK OF LAMB WITH ROASTED POTATOES AND ASPARAGUS
POTATOES WITH RED BELL PEPPER, ONION, SALT,  PEPPER, OLIVE OIL, GARLIC AND ROSEMARY
PLACE ON FOIL LINED BAKING PAN AND BAKE FOR ONE HOUR COVERED WITH FOIL
REMOVE FOIL AND COOK ANOTHER 20 MINUTES OR UNTIL DESIRED TENDERNESS
 
FINISHED POTATOES WERE DELICIOUS
