WOW......this was the ultimate Wedge Salad.  Crisp chilled lettuce with Roasted Beets, Avocado, Egg, Bacon, Green Onion, Blue Cheese Chunks and homemade Blue Cheese Dressing.  Filling and very satisfying.  One of my fave dinners.

After a holiday weekend eating out and having several Drew Burgers it was nice to stay home and enjoy a simple, light and delicious Wedge Salad with Roasted Beets.  The perfect dinner with a nice Chardonnay on a warm Hawaii night.

This is one of my favorite light summer meals.  A simple Wedge Salad kicked up a notch with Roasted Beets, Bacon, Egg, Tomato, Green Onion and Crumbled Blue Cheese.  We picked up some incredible fresh Beets at a local Farmers Market and wow.....they were amazing!

One of my all time favorite salads and the perfect dinner when you want to be full and satisfied.  Love Roasted Beets, Bacon, Egg, Onion, Tomato, Crumbled Blue Cheese and thick and creamy Blue Cheese Dressing.  Usually add Avocado but we were out at the time.

Loved this simple Wedge Salad for dinner.  I chilled the plates and lettuce and then topped with Roasted Beets, Egg, Avocado, Bacon, Green Onion, Tomato, Crumbled Blue Cheese and thick Blue Cheese Dressing.  Yummy!
