DINNER AT HOME

I asked my Wife what she wanted for dinner and she said to cook whatever we have in the refrigerator and then out of the blue said "Chicken Cacciatore".  Didn't know if she was joking or what because she has never requested this dish.  When I got home I found that we had all of the ingredients so I made it.  Used San Marzano Tomatoes, Tomato Paste, Onion, Garlic, Bell Pepper, Carrots, White Wine, Chicken Stock and some Italian Seasonings. Definitely will make this again!

DINNER AT HOME

We bought a bunch of Mozzarella Cheese for a recipe that was never made so I had to come up with a another recipe to use the Mozzarella.  Turned Chicken Breasts into a delicious Chicken Mozzarella and served it over pasta.  Super simple to season and then sautés and brown chicken in a pan.  Add Marinara or Spaghetti Sauce and simmer.  Top with cheese and place under broiler until golden brown.  Really good and really cheesy.
