Just had to strap on the running shoes and participate and support the Susan G. Gomen Race for the Cure.  With so many friends and family being affected by cancer, it just made since to donate to this great cause.  Having a non-profit of my own called CoolingCancer.org made this race special to me.  Seeing how the big boys and girls raise money for cancer research was enlightening to say the least.  To pull off an event of this magnitude with security, volunteers, staff, logistics, scheduling, water, snacks and support takes an army of people and donations.  Makes my little golf tournament to raise money for cancer research small but it also gives me a goal to strive for in the future.

Used some Shredded Chicken from a Rotisserie Chicken and made this delicious salad with Sweet Corn, Japanese Cucumbers, Red Onion, Green Onion, Carrots, Egg and Local Tomatoes over Romaine Lettuce.  A little Italian Style Dressing and I was happy as can be with this dinner.

Blessed to be able to play and eat at Oahu Country Club.  The Club is only minutes from Downtown Honolulu yet transforms you instantly to a place far, far away from the city.  Started my round on this day with some delicious Fish Tacos and ended our round with fresh Sashimi, Poke, BBQ Ribs, Chicken Wings and Pizza.  Another great day at the club with great food, good friends and some golf.

Love watching Wahine Volleyball especially when we score the best seats in the house.  Court Side seats right next to the Wahine team where you can see and hear all the action up close.  We began the evening enjoying a cold beverage and light snacks in the Ed Wong Hospitality Suite which is on the court level just yards from the playing surface.  Problem with seats like this is that once you sit on the court, no other seat will satisfy you.

I absolutely love good Shredded Chicken and Beef Crunchy Tacos.  Made these for dinner and they were better than most all Hawaii Mexican restaurants in my humble opinion.  Always dress my tacos with fresh grated Cheddar Cheese (don't use the grated stuff in a bag), Lettuce, Pico de Gallo and lots of hot sauce.  I love the La Victoria Taco "Hot" Taco Sauce.

Made a variety of dinners using a $6 Rotisserie Chicken from Costco.  Amazing that a family of three can eat for several days on these delicious $6 birds.  For this quick dinner, I paired the Chicken with Garlic Mashed Potatoes and Broccolini.  Very delicious and satisfying.

We always buy the Rotisserie Chicken's from Costco or Sams Club.  After eating most of the meat, I take all the bones and leftover meat and make Chicken Soup.  Usually add a can or two of diced chicken breasts and all of the vegetables we have in the refrigerator plus peas.  Always use onions, celery and carrots at a minimum.  I add cooked pasta to the soup that is al dente at the very end.  Add pasta too soon and it gets mushy.  Love this hearty and thick soup so much!

I eat at Megs Drive Inn because it is walking distance from my office.  Usually go for the Steamed Fish or the Chefs Salad.  Chef Salad always fills me up and is very satisfying.  It is served with French Salad Dressing on the side.
