MOTHER'S DAY DINNER AT HOME

DINNER AT HOME

My Wife refuses to go out on Mother's Day or most Holidays so I cook for her at home.

For Mother's Day she requested a few of her favorite dishes. I delivered!

I am blessed to have the most incredible Wife in the World. She is beautiful, smart, hard working and a great cook. Since we rarely celebrate special events at restaurants, we both decided to have Mothers Day Dinner at home. Of course my Wife took the lead as she was not only having dinner with our Family but with her Mother too. She basically told me to stay out of her way and let her do her thing. I did and the dinner was amazing. We use a Crab Cake recipe taken from Roy's Restaurant and they are amazing. When it comes to Steak, I can tell you that my Wife cooks them as good as any restaurant in Hawaii. Definitely up there with Ruth Chris and Mortons. She seasons and then sears the steaks on a cast iron pan and then finishes them in the oven to a perfect medium rare. Believe me they are amazing. We love Crab Legs and when Costco has the big ones we grab them. So sweet and meaty. Garlic Mashed Potatoes and Brussels Sprouts with Bacon completed the main course. Unbelievable!!!!! For dessert she came up with a Creme Brûlée, Berries and Chocolate covered strawberries. Very blessed man and I know it.

Enjoyed a rare Mothers Day where we went out for lunch and then cooked dinner at home for four different mothers and a few of their children. We were limited on time so I had to rely on Costco for appetizers. As always they came through with Italian Cheese and Meats, Shrimp Tempura and Teriyaki Meatballs. Are were very good and took very little preparation. The star of this Mothers Day dinner was the entree. Filet Mignon and Lobster Tail. I have to hand it to my lovely bride who trimmed the steaks, seasoned and cooked them to absolute perfection. She has mastered the art of searing the steaks on the stove and then finishing in the oven. Always a perfect medium rare. I know it is Mothers Day and I should be doing the cooking. I volunteered to do the cooking but my wife insisted on cooking as she does a much better job at this. Plus her Mom was here too and she wanted to cook for her. Finished this great meal with a slice of Cheesecake topped with a Chocolate Covered Strawberry. As full as everyone was from the dinner, the Cheesecake was so good that there was nothing left on all eight plates. Love you Mom, Step Mom, Mother In Law Mom and Wife Mom. Enjoyed spending this day with all of you.

We rarely venture out for meals on Valentines or Mothers Day. Just not into the large crowds. I asked my wife what she wanted for her Mothers Day dinner and she requested the Pappardelle Pasta with Mushrooms that we enjoyed a few weeks ago. We invited her mother to join us and had a wonderful dinner at home. I served Boschetto Al Tartufo Cheese appetizer to start. This is absolutely one of my favorite appetizers. We discovered the cheese and preparation at Pearl Nightclub in Ala Moana Center. Simply toast some bread with a garlic/butter spread. Coat the bread with Raspberry or Strawberry Preserves and top with a slice of cheese. One bite will put you in cheese heaven. Guaranteed! My wife really likes the Shrimp Tempura from Costco. Simply bake the shrimp in the oven for a few minutes and you have a really good appetizer complete with dipping sauce that is included in the box. Our salad included bacon, avocado and crumbled Blue Cheese. The Pappardelle Pasta with fresh local mushrooms was again delicious. You can find the recipe on this blog. To kick up the dinner we enjoyed some large Alaskan King Crab Legs that we picked up at Costco. These huge legs are filled with the sweetest crab it town. No need for butter. Simply steam and serve. Finished the evening with a chocolate lava cake that was filled with a chocolate sauce in the middle. The chocolate oozed out when you cut into it. Very thankful for my Mom, my wife, my Dad's wife Heidi and my Mother in Law. Where would anyone of us be without a Mom. I love them all!
